    Okay, so when my ground beef says 75%/25% lean, obviously it's stating that it's 75% meat, 25% fat. Okay, but how is that the nutrition facts say that there is 7g of fat to every 4g of protein? What does the percentage of lean to fat have to do with the contents? If it were based off of mass, it's impossible for for 75% lean ground beef to have almost double the amount of fat than protein, right? So what does the 75%/25% notation actually measure? Perhaps it is based off of mass, and I'm not taking account for water and other substances that aren't protein and fat? I'm confused, man. Here's a link to reference..

    Okay, first of all you're looking at the values for 1 oz of ground beef, not 100g. For 100g it's actually 25g fat and 16g protein. So the 25g fat obviously makes sense. That leaves 75g of lean (fat-free) meat. However, meat isn't 100% protein. It's usually somewhere around 20-30%. In this case the 16g of protein suggests the lean portion of the meat is 21% protein by mass.

        1 oz = 28.3 grams
        1 oz of 75/25 ground beef is 75% by weight lean beef and 25% by weight fat OR: 21 grams of meat to 7 grams of fat.

        "Meat" isn't just protein; it also contains water. That's why when you cook it, it turns brown and shrinks - the water comes out.

        1 oz of 75/25 (by weight) ground beef has 4 grams of protein and 7 grams of fat which is 11 grams total. The rest is water, maybe some connective tissue.

        4 grams of protein is 16 calories. 7 grams of fat is 63 calories. For a total of 79 calories (the nutritional info states 82 calories, so there's a fraction in one of the categories not accounted for because of rounding).

        7 grams of fat is indeed 25% of an ounce by weight.
        63/82 = % calories that are fat ~ 77% of calories from fat.

        I rarely eat fattier than 90/10 and always stock up on 95/5 when at Whole Foods. But some folks don't like burgers that are leaner than 85/15 or 80/20.
