  • Favourite fat sources

    Hey folks

I was just wondering if any if you had favourite fat sources (while foods, to cook with etc). How do you use it, when, why etc?

Kerrygold butter. I think it is absolutely delicious. I usually cook eggs in it and put it on vegetables.

(I also can't help but eat some by itself)

coconut oil - add to my coffee and blend. Makes it taste great, keeps me full all morning.
bacon & eggs. Just cause they are pure awesome.
butter - put on or cook with for veggies & steak.

The only oils I cook with are coconut oil, pastured butter/ghee and occasionally virgin cocoa butter. I'm unopposed to extra virgin olive oil from California, but I prefer the others much more so I rarely use it to cook.

Most of my fat comes from dairy and incidental fats from meats (heavily beef with some lamb and chicken mixed in, occasional fish and pork but leaner varieties). Chocolate and coconut are my other contributors. I eat a diet higher in carbs than fats, but the fat ratio I have is high SFA/low PUFA.

I had some leftover pot roast today, and I put a slab of Kerrygold on it for hydration... At least that's how I rationalized it!

Tallow, lard, beef drip, bacon drip (sautéed or roasted vegetables)
Coconut oil (dessert baking, roasting nuts)
Ghee (pan fried eggs, shrimp, eye of round slices, etc.)
Butter (dressing boiled/baked starches or steamed vegetables)
Avocado oil (searing meats before braising like short ribs, lamb shoulder, etc.)
                Olive oil (dressing cold vegetables)
Macadamia oil (dressing cold vegetables when olive is too strong)

Plus sour cream, grated/crumbled cheese, coconut milk, guacamole, and cocoa as called for.

                  Coconut oil for seafood
                  Tallow for red meats
                  Butter for snacking

I also save fat that cooks off things and recycle it for cooking like when I roast a duck. Duck fat is so gooooood.

                      1. butter - does almost anything and tastes awesome
                      2. bone marrow - I could almost eat this daily
                      3. coconut oil - versatile like butter
                      4. olive oil - good for wilting greens and tomatoes
                      5. lard and tallow - for higher heat cooking
                      6. avocado oil - good for homemade mayonnaise
                      7. a nice serving of fatty salmon
                      8. bacon fat - the primary reason for eating bacon for me

Coconut milk in my coffee, around 1 cup a day
                        Bacon
Oily fish (ghetto, out of the can usually in water)
Tallow (make it myself from local, grassfed cow suet)
                        Coconut oil
Fatty fruits like nuts and avocado
The soup we have been making out of a whole chicken in the pressure cooker/crockpot.
                        Organ meats like liver
                        All the other meats!

I cook my eggs in bacon fat every morning. I save the rest. When I need cooking oil for something, and I'm out of bacon fat, I use a mixture of coconut oil and Kerrygold butter.
The above should be viewed as complete and utter nonsense.

                              right now:
                              butter
                              eggs
                              chocolate
ground beef w its fat (I keep it 1/4 pound frozen bits so it is easy to use it as the fat with some veggies)
coconut oil, though I go through phases and right now is an off phase
