  • Is ultra pasturization proliferating?

    Seems like more and more often I'm seeing Ultra-Pasteurized stuff. Even the organic milk! I can still get regular pasteurized (no raw yet ), but even store brands are going the UP route. At least I've finally found a source of non-homogenized grass fed milk (intermittently)!

    From what I've seen, yes. Although I think it was more prevalent in Europe and is now catching on more and more in the US. Ultra-Pasteurized milk doesn't even need refrigeration, but I think they still keep it in the cooler because people are used to seeing it there. In the baking aisle I can sometimes see Parmalat on the shelf. (Not that I buy it...)
