  • Kombucha recipe

    I want to add some fermented foods to my diet but have FODMAPS issues so kraut, etc. is out...was wondering if anyone had a sugar-free recipe for Kombucha...also need to remain keto adapted so can't be taking in any sugar through my beverages...other suggestions to get probiotics in without resorting to pills that would not kick me out of ketosis? Thanks!

    You can basically ferment any veggies - not sure if carrots are a fodmap, but there are lots of recipes for fermented carrots.

    Also, kombucha needs sugar to start the fermentation process, if you want a sugar-free drinkable probiotic, I would try beet kvass.

      Yeah, once the kombucha is brewed, the scoby has eaten most of the sugar, but there's definitely still a small sugar content. There's no way to make kombucha without adding sugar. It's what the bacteria eat.

          According to My Fit Day, 16oz of homemade kombucha has 60 calories and 5 grams carbs. No idea how accurate that is, but I think that's probably a solid ballpark estimate. It's how I log it, and I drink a ton of the stuff and haven't gained any weight.

            Of that is all it is,I'd be willing to spend 2.5 carbs on 8oz a day...
