  • difference between raw butter and pasteurized butter

    Went to the organic shop and bought some pasteurized butter than read a article where someone mentions raw butter is a better option, if the organic shop is only selling pasteurized butter where would you buy raw? and what is the difference?

      Do you have access to raw butter? If you live on a farm, eat raw butter. If not, you probably don't have a choice. Raw butter is not pasteurized.

          Not in New Jersey. We can't get any raw milk products except for aged cheeses.

              Yeah, I wish I lived closer. I've bought raw milk from a couple places just over the border, but it's about an hour's drive each way, and raw milk doesn't exactly have a shelf life that makes it conducive to being stocked up in great quantities.

                Is there any real benefit to getting raw butter? I understand the benefits of raw whole milk, but butter? I just get Kerrygold butter and clarify it to remove the milk solids that are affected by pasteurization. I didn't think that the butter fat was impacted by pasteurization.

                  Raw butter is made from unpasteurized cream, or cream that is skimmed from unpasteurized milk. The churned butter itself is not pasteurized in the butter-making process. If you're going to clarify butter, there is no advantage to sourcing raw.

                  I don't have access to raw dairy products, so it's totally off my radar.
