  • Superbowl Snacks

    What are you making for the Superbowl this year?

    We'll have a house full of big-eating SAD-ers, so I want to have lots of options that we'll all enjoy.

    I'm thinking:
    - Wings
    - Meatballs
    - Bacon-wrapped hunks of grilled pineapple
    - Veggie tray
    - Shrimp cocktail

    ...any other ideas?

    I'm making chicken parmasean meatballs from Peace Love and Low Carb and some other bites of stuff.

      Wings, meatballs, and shrimp sound awesome.
      I'd probably add some strong cheese, maybe aged Gouda, but I know that's not for everyone.

            We just made the greek salad skewers which were super yummy.

              I'm making chicken wings and clam dip, with a veggie tray. I like the idea of the Greek skewers, will have to look at that.

                Yeah, summer sausage will be an awesome addition as well as guacamole if you like it. That sounds like a solid spread!

                    What about the chips? Nom nom paleo had 4 kinds in her blog this week. Sweet potato, kale, Brussel sprout and mushroom.

                        If you are in to white rice as a safe starch, any kind of paleo filling in a rice wrapper would make for great finger food. Here is my favorite variation but if you like more veggies a more authentic Vietnamese recipe would do you as well:

                          Heroin Wings NOM. My non low carber friends fight us for these every year. Hint dip in egg rather than butter. Coating sticks better.

                              Maybe without the taco shell, etc.

                              But srsly. Baking up some sweet potato or white potato fries would be my first-go to. Next up would be some homemade sushi - couple of nori wraps, leftover salmon and avocado and some white rice (or scrambled egg of you don't eat rice) and you got yourself some good snacks to go.
