  • Chuck eye

    Tried chuck eye for the first time today... holy crap it's good. Slow roast then a quick sear for soft, gooey connective tissue and crisp fat. I usually get ribeye, sirloin, or t-bones but now I've got a new favorite cut. And it was $3/lb on sale. I can't believe it's cheaper than the other parts.

    Chuck eye? Eye of the round? Not familiar with the cut at all.

      Chuck eye is my go to steak as well as flat iron and tri-tip. All cheap cuts.
      Make sure it's chuck eye and not just chuck steak.

        Center cut chuck eye is great. Hard to tell the difference from a ribeye while eating it. They are always tender, fatty and juicy. A bone in ribeye is still my favorite cut of beef but at half the price chuck eyes are wonderful.

          I've been meaning to try a tri-tip but haven't seen my grocery store carry them.
