I tried guac at a mexican restaurant once. It was pretty bland and tasteless - it made me wonder what the point was behind it. I can see the point for US, but not as a condiment b/c it was seriously pointless to me. It didn't add anything to the nachos I was eating.
I figured if I chopped it up and added it to my egg salad it would blend right in texture-wise, and since it was pretty tasteless as a guac, I didn't figure it would affect my egg salad much. But maybe I'm fooling myself.
No salad fixin's at home, so not going to be used as a salad topper... At least not this week. And I'm not really a big salad eater unless we're going out and it comes as a side dish. I'd almost like to mix it in with foods, to be perfectly honest with you.

I posted a recipe for Oopsie Rolls in the recipe list for our group and let me tell you what, those little buggers are AMAZING. They make excellent sandwiches and can be toasted, used as a pizza crust, etc. I made a breakfast sandwich with 2 oopsie rolls, 3 strips bacon, one whole egg w/2 yolks and a slice of cheddar cheese. Delish! I may use one egg tomorrow and add a bit of avocado. I'm thinking I will make some tuna salad with my ranch dressing with full fage used in place of mayo(like I've said before, I despise mayo with a passion) and have a tuna melt later in the week.
That looks like something I saw in "Paleo Indulgences". I'll have to compare recipes and see if I need to print the one you posted or not. I can think of some uses for them for sure!
When I made them and tried them yesterday, I almost cried! It made me happy just to have the option of sandwiches back and its another way to Moar Fat in! A friend also sent me another recipe that seems slightly easier and I'll post that when I get home.
I'm thinking I will attempt to do a MOAR Omega 3 fat thing. Not so much a high fat thing but make more of the fat I do eat O3 fat rather than O6. More coconut fat, too. But not so much more of my calories coming from fat, just the fat that I already eat being more on the O3 and coconut spectrum of fats.
