  • Question about soup bones

    I'd like to try making my own stock. Is it okay to use regular, grain-fed bones from the supermarket, or is it important that soup bones be organic/grass-fed? Is there much of a difference between the two?

    The difference is mainly to the cow's life and the environment and the resulting fat in the meat that still clings to the bone. I believe I read in Mark's blog that the marrow fat has no real difference between grass fed and regular.

      Thanks! I guess I'll try to get grass-fed, and if not I'll trim as much of the fat off as I can.
