    It's my birthday today so my wife has made me my favourite cake. Coconut, butter, eggs and maple syrup.....mmmm and then just read this so I'll think I'll have another slice

    I like maple, in small amounts. It's easily overpowering for me. I've been thinking of making a home-made maple ice cream though.

      I love maple anything. I could drink maple syrup straight.

      Do you happen to have a recipe for that cake? =]

        Unfortunately my wife doesn't do measurements, she just throws everything in together and hopes for the best :-)

        More or less though it's 3 eggs, dessicated coconut and butter (about 250g I think). I don't think the amounts are that critical as there's no levitation going on. She beats the eggs and butter together, I suppose the amount of butter ultimately depends on how big a cake you want as the next step is to add the coconut until you get quite a thick consistency. I think she normally uses about 400g of coconut. You don't need much maple syrup, probably about two spoons worth. The result is a cake that isn't too sweet, is gloriously greasy with butter and as the wonderful taste of coconut with a hint of maple syrup in the background.

        I'll try to get some more precise measurements next time she makes it so watch this space...

              I consider it a "sensible indulgence" as Mark says... I don't think anything with that much sugar can really be called "primal." But I do feel a lot better about using local, pure maple syrup when I want something sweet, rather than white refined sugar.

                I make it and it's yum! (Well, it's more of a custard cause I put egg in it).

                I'm referring to maple syrup ice cream, by the way.
