    I'm Italian: Extra Virgin Olive Oil or Coconut Oil are my go to's. In a pinch: Grape seed oil. /Lu

    Goal Reached: 30-09-12 @ 143lb. Now bouncing between 145lb - 149lb. I'd like less bounce and more consistency :-)

      Did you try the Start Here button and look for the definitive guide series on fats and oils?

          Yeah, we're all mostly just going to quote Mark Sisson. My favorite fats, for health reasons, are tallow and coconut oil and coconut milk (the good thick stuff, like Aroy-D, not the fake SO Delicious water). Olive oil is usually counterfeit and make with soybean (a rancid, harmful oil) or other trash oils, so I avoid it. Nut fats are great, as are most whole food fats. I get them by eating the whole food - like avocados, nuts and eggs. Since you're studying fats, you already know vegetable oil is poison, as are most seed oils. Animal fats are the least inflammatory and promote optimal cholesterol activity in the body.

              Coconut oil for veggies, lard and tallow for meats. Olive oil, avocado, and other oils, very sparingly.

                Tallow,coconut oil, butter and bacon grease for cooking; EVOO for salads.

                    Ghee/Butter/Lard. Sometimes Olive Oil.
                    Disclaimer: I eat 'meat and vegetables' ala Primal, although I don't agree with the carb curve. I like Perfect Health Diet and WAPF Lactofermentation a lot.

                        Added to salads: California extra virgin olive oil

                        If I ever make a bunch of soup from beef or lamb and happen to end up with a lot of leftover fat, I will use it to cook as well.

                            grassfed butter or home rendered lard for most cooking. Coconut oil to deep fry things (it's AWESOME). Olive oil on salads or as an ingredient, but not as cooking lubricant.

                              Most of us here are going to ignore the majority of your options.

                              I use butter, lard, tallow for cooking sometimes, but none of those are oils.

                              The ONLY oil I use for cooking on that list is coconut but I abuse the stuff.

                              Olive oil is expensive, so I buy quality and use the stuff for salad dressings, topping already-cooked meats for a boost of flavor, and in other uncooked sauces.
