lol yeah i was gonna say i dont really think of it as a substitution if i were to have some sweet potato. i love it, i have it a few times a week with dinners. we rub them in olive oil and bake them in the oven skins on whole. the skin basically starts peeling off it. and with some butter inside of it it is so so sweet just as it is, like its dripping with honey. i almost feel guilty eating it because it is so sweet its like eating sweet potato pie. in fact i bet if i put some cinnamon butter on it and some whipped coconut cream it could be dessert for a night!
