  • Egg = beef?

    I'm trying to save a little money by buying less and growing more. I'm almost out of beef, pigs aren't hitting the freezer until November, and I have a LOT of eggs coming from my hens.

    How many eggs would "equal" how much beef?
    And I put equal in quotes because I know this is apples & oranges. I'm just curious what ratio might work if I want to swap one form of protein for the other. And I don't mean no beef, just less.

    1 egg has roughly the same amount of protein and fat as 1 ounce of 80/20% ground beef. So a 1/4 lb. hamburger roughly equals 4 eggs.

      That could be a lot of eggs on top of what I already eat, but gives me something to work with in menu planning.

        Plus eggs have an awesome nutritional profile and a biological value of 100 (for protein absorption) vs. beefs BV of 74.3 based on a quick search. So dare I say eggs trump beef?
