    If I start drinking green tea with my red meat to reduce the iron slap, what else is it binding to?

    Coffee.

      I don't think tea is binding to coffee. I could see certain elements binding, like the trace of magnesium in coffee to an element of the tea perhaps.

        I've read that tea inhibits the bioaccessibility of mercury in fish, which would be a good thing. This is an in vitro study though so who knows if it translates to any real benefit in humans.
