  • So, I broke down and bought a sweet potato

    Now I need tips on how to cook it so it's not mushy or really sweet tasting. I like sweet potato 'french' fries, so can I just slice the potato and fry it in a pan like I would a white potato? Maybe in coconut oil and sea salt, until brown on each side?

    How do you cook your sweets? Ideas please!

    One way I have made good fries is to cook the potato first in the microwave. Not to the point of mushiness or fully cooked, just enough to get it started. Then cut it up, coat a cookie sheet with coconut and bake in the oven until browned. But usually I just nuke them until done and eat them like baked potatoes with some salt or butter. I never add cinnamon or sugar or anything sweet-like.

        Baked potato style with butter is so good I can't bring myself to try any other way. On previous diets I've eaten sweet potatoes but with minimal or no butter to keep fat down. They are ok that way but I'd get tired of them if I overate them. With a full serving of butter (about the amount in an individual wrapped butter slice) they get waaay better. I was surprised at the difference.

          Nady, in my experience pan-frying sweet potatoes turn them mushy. I usually cut mine into relatively thick wedges, toss with sesame oil, ginger juice, red pepper flakes and soy sauce, and broil on a sheet under the broiler, turning after about 7 or 8 min. Obviously, if you object to soy, or worried about sesame oil or seeds, do not like oriental flavor... etc coconut oil is always your friend (I micro it to liquid form before tossing my veggies in it) and coconut flakes can give a bit of coating too. You can also use orange zest or dry herbs of your choosing. I find that paprica and caraway goes well with it as well.

          We also love sweet potato dehydrated with a touch of olive oil and sea salt

              Bake for an hour to hour and a half at 350. Add grassfed butter, cinammon, and apple pie spice or pumpkin pie spice and or nutmeg

                      You can make something savory and amazing by cooking up some bacon crumbles, poking holes in that sweet potato and microwaving it for 6-7 minutes, cut it open, spread some coconut oil on it, spinkle some garlic salt on it, and top it with bacon-crumbles. It makes me feel sexy, just typing this...

                          My favorite way to eat sweet potatoes is baked.
                          Cube it, toss with plenty of olive oil, salt, pepper and thyme and bake at like 375 until done, about 45min or so. As long as you do not crowd the pan you're baking in, the edges of the potatoes will crisp up and become delicious.
                          You can also try other spices, I just like the simplicity of s&p and thyme.

                          Oh and this dish goes perfectly with roasted chicken. YUM!
