  • What is that white stuff that comes out of bacon?

    When cooking bacon, SOMETIMES (not always) some white thing/liquid flows out of the bacon. What is this?

    Same thing that comes out of the chicken breast/pork chop/fish fillet when the cooking temp is too low to sear the outside. Just water with a little protein 'juice'. With beef, it's that weird pink gloppy stuff~

      I get this from fish as well. Maybe its fat?

        Maybe it's the polyunsaturated fat, like on fish? Not sure.

          It is the muscle myoglobin.

          protein.

            Protein, its similar in makeup to the egg white.
