  • Creative ways to eat more coconut oil

    Hi there, I'm struggling with being at my parents' house temporarily for the summer and some days portions of primal foods are just too small for me, and I'm getting energy lows. I need to up the fat. I have some coconut oil, so I figure a few extra Tbsps on the rougher days will help. But I don't just want to eat the oil on its own.

    I enjoy spreading it on a piece dark lindt chocolate in the evenings as a sort of 'dessert'. I could just have an extra square or two of chocolate earlier in the day, and it probably wouldn't hurt me. But if people have any other creative ways of eating more coconut oil I would really appreciate the ideas!

    (Note: A few details... I am fairly active, and am not looking to lose any weight. I am also fine with eating starchy carbs.)

    Recipe from: 3 MINUTE CHOCOLATE CAKE - Linda's Low Carb Menus & Recipes
    3 MINUTE CHOCOLATE CAKE
    1/4 cup almond flour, 1 ounce
    1 tablespoon cocoa
    1/4 teaspoon baking powder
    3 tablespoons plus 1 teaspoon granulated Splenda or equivalent liquid Splenda
    2 tablespoons butter, melted
    1 tablespoon water
    1 egg

    Mix the almond flour, cocoa, baking powder and granulated Splenda, if using, in a 2-cup glass measuring cup. Stir in the liquid Splenda, if using, butter, water and egg. Mix well with a spoon or fork. Scrape batter down evenly with a rubber spatula. Cover with plastic wrap * and vent by cutting a small slit in center. Microwave on HIGH 1 minute until set but still a little moist on top. I had to do mine for 1 minute 20 seconds. Cool slightly and serve warm topped with whipped cream or cool completely and frost as desired.
    I replace the butter with coconut oil, and the splenda with stevia. You could probably replace the almond meal with coconut flour too, though it may turn out drier. It's delicious and an easy way to get 2TB of coconut oil in.

        There's a company called Something Pure that makes a velvet chocolate flavor. Good enough to eat off the spoon, I tell ya what!

          Thanks everyone!

          I'll give the chocolate cake a try when I'm craving some dessert.

          As for the chocolate hearts - what a cute idea! It's pretty much the same as my chocolate and coconut oil -except im too lazy to melt the two together. I'll keep a look out for some cute shaped trays and try this out sometime.

          Something Pure looks AMAZING. I don't really feel like ordering that in at the moment. But it's definitely something I'll keep in mind for the future (*pinned to pinterest!!*). The cinnamon bun flavour sounds crazy awesome!!

          Anyone got any other "lazy" ideas? Like just spreading the coconut oil on something interesting??

            Mash it into a sweet potato? I nuke mine. Takes only 3-5 minutes depending on how big they are.

              I know a couple that gives coconut oil to their dog as part of a holistic diet. But they do not eat it themselves

                Oh Dado....I've missed you.

                ....replace all other oils with Coconut Oil if consumption of "more" is desired.
