    So I went shopping today and found a bunch of this stuff, skin on, just beautiful. Fish store most of their fat in the belly, just like me. They said it was wild caught, but the fish had no papers, so I'm not sure. Should I cook this or just eat raw, like candy?

    I'd cook it to 130-135F tops. That should give you a delicious medium rare.
