Been reading that yams (technically sweet potatoes) are a PB acceptable carb, at least once in a while. I started thinking about how good my Mother's sweet potato pie was many decades ago when I was a kid. I had 1/2 large yam leftover so I put it in the fridge. Ate it cold, with skin, sprinkled with cinnamon and added some half&half. Yikes, it tasted like a bowl of sweet potato pie ice cream. I love ice cream and can down Haagen Daas with the best of them. But, I must say this dish was every bit as satisfying as ice cream and hopefully much more nutritious.
