I'm assuming you are using the konjac root ones and not the tofu ones (there are both which are both labeled shiritake).
The konjac kind are pure dietary fiber which can plug the digestive system up a bit especially if you are not used to it. That has caused me to feel bloaty when I've eaten a bunch.
If by chance you got the tofu ones you could be having a reaction to the soy. (blech)
