  • alcohol free kombucha?

    Being a strict non drinker but liking the idea of kombucha, is there a way of making this without it creating the alcohol?
    I was wondering if it would work in a similar way to kefir if I put a scoby in milk, or would that kill that scoby and ruin the milk?
    Seems odd that kefir grains eats the sugar from the milk - pretty much what kombucha does, but doesnt turn it into alcohol.

    Any sensible suggestions?

    I wouldn't worry about it. People have actually used kombucha tea as a therapy for alcohol addiction. Any time the person wants a drink, they have a glass of the "tea" instead. It seems to lessen the desire for alcohol for whatever reason. So practically speaking kombucha tea is a help not a hindrance to "misuse" of alcohol.

    I hadn't known that kombucha tea was slightly alcoholic, but if you say it is, or can be, I'm not surprised. But I wouldn't sweat it. We just don't live in that kind of world: the kind, that is, where you can always get zero of x (whatever x might be). I think that if there's any alcohol in there it's not going to amount to much. If you wanted alcohol, you'd have to use a good quality strain of yeast, not a kombucha fungus. If there's some alcohol in there -- a fraction of a percent or whatever -- it'd be no more than what you'd get in fruit juice if you left it around for a day or so after pressing it before drinking it. And if there were some alcohol in there and you waited a bit longer it would probably get converted to acetic acid (vinegar) -- unless you had some way of excluding bacteria that would do that ... not easy in an open vessel in a domestic situation.

    Yeah, it could be a good idea to avoid booze -- for example, if one never knew when to stop once started, but making avoidance into a fetish just isn't necessary. As I say, we just don't live in that sort of world -- heck, some people can be over the limit of a breathalyzer without drinking on account their own bodies make alcohol.

      It has about 3 to 5% alcohol content - the same as a standard beer.
      And my avoidance of alcohol is not a fetish - I am a recovering alcoholic and will NOT drink anything deliberately with alcohol in it!

        Just curious...where did you read this? I thought it was 0.5%. I definitely do not feel a buzz from kombucha like I do with beer.

        ETA: To answer your question...I'm not sure if there's a way to brew it without any alcohol at all. You might get a lower alcohol content if you brew it for a shorter period of time, but it might also be sweeter than you wanted it.

          No it does not. My husband brews beer. We were testing to see how much sugar remained in the Kombucha. BUT, the alcohol left is no where near a level of a beer. It's such a minor amount that even a non drinking average person would not notice. If you have concerns I would just avoid all together and stick to kefir or something else.

            Kombucha better not have booze in it, or I'm going to Mormon Hell. Fermented, yes. Booze? No. I have a bottle of Synergy Chia Kombucha in the fridge. Ingredients: kombucha, cherry juice, chia, and cherry juice
            I always assumed fermented in kombucha was the same/similar as fermenting dairy into yogurt.

              I have a bottle of GT's Organic Kombucha sitting in front of me, I can not find any where on the label indicating alcohol content-

                I remember that last summer Whole Foods pulled all the kombucha for a while because of uncertainty about alcohol content.

                  They still sell the "real" stuff with a little alcohol in it, but you have to order it straight from them online. Before the ridiculous regluation started, G.T.'s lable said it may contain about .o5% alcohol.

                    Other than having had a past addiction, or following strict reliqious rules, there really is no reason to avoid alcohol.

                      This is false.

                      Actually I'm in the process of writing up a 10 minute presentation about kombucha for my organic & biochemistry class. If you want to know, this is how kombucha fermentation works so that there is little to no alcohol...

                      A SCOBY is a symbiotic relationship between yeast and bacteria.
                      Sugar added to the tea is turned to alcohol by the yeast.
                      The alcohol is then consumed by the bacteria to produce acetic acid, along with other acids.

                      And the physical "SCOBY" is actually microbial cellulose, produced by Acetobacter, one of the bacteria found in kombucha. It's completely edible, as found in one Filipino dessert.

                        Actually this is the reason GT's had the big recall a year or so ago. Some of the batches were testing at higher than 0.5%. This is why their new bottles say "enlightened" on them. They found a way to prevent any alcohol from ending up in the final product. You can still find the old stuff in remote locations or order it. It's funny though, I do remember a couple times burping while driniking an original one and getting the familiar taste of light beer.

                          I read on one of the various sites on Kombucha brewing that said it contained between 3 and 5% alcohol but I dont remember which one it was! I will try to find it again.

                            Apologies guys! I misread it. It says .3 to .5% content. I didn't notice the 'point'.

                              Having been something of a drinker in my past (and that is all I'll say on the subject. Unless, ironically, I was drunk)...

                              Kombucha is a wonderful drink which has never, not once, made me feel like I was relapsing.

                              Mormon hell aside... my wife would kill me! Or if not death... I'm sure it wouldn't be pleasant!
