My mother used to take leftover mashed potatoes, make patties, coat them in flour, S&P, and then brown in oil. I wonder how that would work with mashed cauliflower and butter but no flour? Would they fall apart? I haven't made the mashed cauliflower yet, even though I've had a head sitting in my crisper this past week.
