  • Mashed cauliflower "pancakes"?

    My mother used to take leftover mashed potatoes, make patties, coat them in flour, S&P, and then brown in oil. I wonder how that would work with mashed cauliflower and butter but no flour? Would they fall apart? I haven't made the mashed cauliflower yet, even though I've had a head sitting in my crisper this past week.

    Add a few eggs as a binder and let us know how it goes! I would also personally add some garlic, onion, s&p but that's just me.

      Hurry up and use that cauliflower if it's been in your fridge for a week! Even if it doesn't hold together, it should still taste pretty yummy. (Unless it's already old and rubbery.)

          I think I am going to have to try this tonight for dinner. I am going to crisp up some bacon, sautee the onions and garlic in bacon fat, steam the cauliflower and then mash that up, Throw it all together with a couple of eggs, s&p, and some really yummy cheese (not sure what kind yet) and enjoy!!

          Thanks for the idea! My mouth is watering as I sit here at work.

            A) I just realized I should have put this under recipes Too bad I can't move it.
            B) The bacon and cheese is an excellent idea! Maybe serve with a dollop of whole fat Greek yogurt?

                    If that doesn't work, you can put cauliflower pieces in a blender and just pulse it a handful of times and it makes really nice "cauliflower rice" or little pebbles. You can treat it like rice from there and steam it if you like. I eat it raw like that with different tomato based sauces, or use it in raw veggie "stews".
                    You sound pretty creative already so i'd be interested in what you come up with.

                      It's been a day...So, How was it? Sorry, if there's a little pressure here. We're just all too excited to know..and if all goes well, I 'll probably try it myself. I love pancake and I like cauliflower...so let us know!

                        I took the idea and made the pancakes last night. I steamed the cauliflower and then mashed it with about 2 tbsp of cream cheese. (I didn't make it creamy enough though). Sauteed bacon and onions together, threw them in with the mashed cauliflower, added a handful of shredded cheddar cheese and a bit of salt and pepper, threw 2 eggs in and sautéed the whole mixture in kerrygold. I thought it was a success. I'm not the best of cooks but I am improving and this was really pretty yummy. Next time I would smooth out the cauliflower a bit more, and def add garlic to the sautéed onion and bacon. I think I will make this a go-to meal. It made a ton so I have a yummy lunch to break my fast today. I am going to put the mixture over a bed of baby spinach. Yay!

                          My head went bad so I'm going to buy a bunch of frozen on Saturday and try with that.
