There's a 6 hour seminar by Matt Lalonde (Login). Paraphrasing: basically he talks about nitrites used in meat. According to him it's not that bad. You can buy meat marketed as having celery extract to replace the nitrite normally used. It's still nitrite. If you are going to eat vegetables/plants you will be eating nitrites.
Would I be putting a grain-feed cow on a fad diet if I took it out of the feedlot and put it on pasture eating the grass nature intended?
