  • Avocado oil

    I know that it's best to eat olive oil cold and to use coconut oil for cooking, but how do I use Avocado oil? It's on sale at my local health food store and I wanted to try it out but I don't know what the heck to do with it! Also, I recently saw some potato chips that are cooked in 100% avocado oil and I wanted to try them for an occasional semi-primal snack (sometimes I really miss the crunch of a potato chip!) but I wasn't sure if it's really any better than regular chips cooked in canola oil.

    Also, I'm going out for sushi next week and want to figure out what I can eat, is the miso soup a no-no?

    I think miso soup is fine, I believe Mark wrote a "definitive guide to soy" a long time ago and miso was on the "go ahead" category. Do a search for that to be sure though.

    I also have avocado oil but not sure how to use it, got it for free at work. I know some people have used it to make mayo though. The bottle I have is refined and is meant to be used as a cooking oil for high-heat.

    Lastly, you can make your own potato chips pretty easily, just slice potatoes real thin, coat in your favorite good oil (or animal fat) and bake and or/fry...

    I make lard "hash browns" damn near every weekend for breakfast, with bacon bits and eggs it's fucking delicious.
    I used to seriously post here, now I prefer to troll.

      It is excellent with vinegar for salad dressing.

        I use it for salads with a bit of white wine vinegar and chopped garlic. It's also great on skin!

            Yes on the mayo, for sure.

            Also, avocado oil is very special for its ridiculously high smoke point.

              So it's ok to cook with then? I read conflicting info on this so I wasn't sure.

                Well, my sources are Google and a recent article in Saveur magazine, so take it for what its worth. I've never seen any conflicting info though -- just that its great for cooking.

                  Avocado has nearly an identical lipid profile to olive oil. You can use them interchangeably. I cook with extra virgin olive oil all the time. Just don't heat it til it smokes. Studies have shown that the monounsaturated fats hold up well to heat. Just don't keep reusing the oil like they do at restaurants. A quick fry isn't going to hurt it IMO, especially if you infused herbs into the oil. I've purposely microwaved oil for 30 seconds to warm it up, placed rosemary in it and kept it in the fridge to increase the antioxidant profile. Some things just have to be cooked in olive oil for the wonderful flavor. Treat avocado oil the same IMO.
