  • Glorious Caulifower Rice

    I never in a million years thought I could give up rice. Love the stuff. When I was a malnourished teen it was all I ate. Love. Love. Love rice.

    I've made two of our favorite dishes that usually include rice, but I used cauliflower instead. Didn't even miss the rice. Very satisfying meal.

      Just tried making cauliflower fried rice.... wish I hadn't.

          Cauliflower rice not bad but I prefer some basmati rice. I know it's carby but I eat it occasionally.

              Well, I learned to make fried rice from a gifted guy from hong kong, so I used the same basic approach but subbed the cauliflower.

              To prep the cauliflower I lightly sauteed it and then steamed it in a pan. Into the food chopper and "riced" it.

              Then in a pan, some fat, a couple eggs, srambled them up, added ginger, black pepper (I prefer it over white), garlic, and then the "rice". Sauteed with a touch of sesame oil and some soy sauce. Off the heat, into the bowl, done.

              It wasn't something I'll have again, if I do it, I'll just take the 24 hours of asthma and make fried rice.

                I like to call it cauliflower cous cous. Seems more like the texture. I served it at a party as a cous cous salad with some parsley, feta, fresh tomatoes, mint and lots of Olive oil and I had 5 people actually gasp when I told them it was cauliflower.
                I pulse mine in the cuisinart till its pretty fine and then put in a skillet with some water and just let the water cook off, when its dry I add whatever flavors I wish.

                  Me too, Sue. Jasmine isn't bad either. I haven't yet tried the cauliflower rice, though.

                    Yeh, Jasmine is nice too. I've done the cauliflower rice before when I was very carb-phobic.

                      In case you are interested, this is the recipe I plan to try. I've found Nom Nom Paleo to provide consistently reliable recipes (but I've just dipped my toe into the volume of recipes she's provided)

                        I haven't tried it as rice yet, but I imagine that I'd like it. I also love rice with certain foods, especially curries.

                        I have tried it as a pizza crust. I loved it and the kids also liked it (shocking!!).

                          Just made it for the first time following a youtube example, had it with a sri lankan style curry beef. It's a bit of a faf compared to prepping basmati rice but it's pretty good.

                            I just grate it, because I don't have a food processor, and put it in a pan with oil. There are probably yummier ways to do it. I like the couse cous recipe idea!
