    I all.. looking for some cool side dish ideas to a meaty main dish.

      Gazpacho
      pico de gallo and pork rinds or raw veggies
      salad
      Elote style cucumber (spears of cuke dusted with powdered chili, lime, and garlic powder. Serve with a ranch dip)
      caprese salad

        Cauliflower (not Potato) Salad -- just do your favorite potato salad fixings with steamed, cut-up cauliflower instead of potato. I use mayo, celery, some sweet peppers, hard-boiled egg, a little mustard, salt, pepper, chopped pickle, whatever looks good that I have on hand.

          Coleslaw. I make mine with an apple, yogurt instead of mayo, mustard, a little stevia and apple cider vinegar.

            Start with these:

            Steps:

            1- Slice open one side of a peppercini (picked in the jar kind work great) . Under cold water, use your fingers and to clean it out and remove seeds.

            2- Stuff the pepper with raw sausage of your choice, until it will just close up again.

            3- using the back of a flat bladed knife, pressing lightly while pulling ever so lightly, stretch a piece of bacon so it gets wider and about 1.5 X longer than normal.

            4- Cut the stretched bacon in half.

            5- wrap each pepper with a half piece of bacon and immediatly feed it onto a METAL skewer, holding the bacon in place.

            6- BBQ on medium heat, flipping a few times, until bacon is just beginning to crisp up (10-12 minutes).

            7- Before you remove them from the skewers, stab each one with a wooden toothpick so the bacon stays on when you slide it off the metal skewer.

            8- Stand back, because your guests are going to run you over to get to them!

                  Greek salad, croutonless caesar salad (bacon bits can give crunch) with home-made dressing.

                  Here's my killer caesar salad dressing recipe:

                  Mix together and whip for up to 1 min with immersion blender: 1 egg, 1/3 cup good EVOO, 1 tbsp good balsamic or red wine vinegar, 1/2 tsp anchovy paste, 1/2 tsp salt, 1/2 tsp pepper, garlic to taste (1/2 to 1 clove, depending on size), few drops Worcestershire sauce. When well mixed, add 1/3 cup grated Parmesan cheese and whip again. Amounts can be adjusted to your taste for savouriness - I just eyeball everything. Pour over torn romaine lettuce, sprinkle with bacon bits and more Parmesan Cheese.
