  • Grilling with Olive Oil

    Hello all, I wanted to inquire if it is ok to grill meat that is basted/marinated with olive oil (I go with extra virgin - first cold pressed). I realize that one should not really fry with olive oil (there are better choices for frying). However, I wanted to know if the heat from the grilling process would cause any oxidation issues. I would appreciate your insight.

    I want to know, too, because I've thus far cooked most of my salmon, turkey and other meats in a frying pan on medium-high in olive oil. I go as low on the temp as I can to avoid burning the oil, but I don't know the actual temp of my stove top. Takes about 10 minutes to cook a 1" thick frozen salmon fillet all the way through.

        Its my favorite grilling oil!
        If you put too much on it can flair up with direct heat.

          Well, like you and all the others, I think olive oil is great for grilling.

          The *problem* is, the flame and/or high heat is likely to oxidate the PUFA components of olive oil, which basically means bad news from a health perspective.

          It drives me crazy because I love using olive oil on steaks while grilling and I wish I didn't learn so much about PUFA oxidation

            That's the part I'm wondering about. Is coconut oil the superior frying oil, then?

              Cook on low to medium heat and for not too long and you'll be fine. The oil will not oxidise.

              High-heat frying will.

                Cooking with olive oil is fine. Just keep it from smoking.

                  Maybe avocado oil would be best for high heat grilling (at least, for those of us who don't care for coconut oil).

                    Yeah. Use the refined coconut oil if you don't want coconut flavored meat.
