  • Beautiful, Delicious, Sexy FAT

    okay, so after my recent blood panel coming back with increased cholesterol, I'm cutting back on animal fat and replacing it with other fats. What are some of the fats I can replace it with besides avocado, coconut, bacon, and butter? Would cacao butter be a good option? I made a super yummy snack the other day of melted cacao butter, coconut cream concentrate, butter, and unsweetened shredded coconut. I was full and happy for hours. Just wanted to make sure it was one of the "good" fats.
    Ideas on fat sources, please, thanks!

      And that brings up another question! Why can't you heat olive oil? We cook with it all the time and haven't experienced any ill effects. Is it olive oil you can't cook with or EVOO? We use EVOO, but we also have regular olive oil. Is either safe to heat?

        EVOO has a much lower smoke point (oxidation point) than "light" olive oil (non-virgin.. that tart!) You can cook with the "light" stuff ("light" is the designation in the regular store... it just means non-EVOO) because it's smoke point is pretty high. Just don't cook with EVOO because it's smoke point is low.

                  If you don't mind me (us) being nosy, what were the actual results?

                  It was my understanding that high cholesterol, or even high LDL cholesterol, in and of itself was not always a bad thing.

                            I would use leaner cuts of meat and cook with coconut oil. EVOO for salads. Lots of low carb salad veg, some avocado.

                              kurite, my blood panel results were funkay to say the least. I promised my doc I'd work on getting my cholesterol back under control over the summer. I can't afford grass fed critter whose fat is safer to eat than conventional. So I am turning to alternative fats. Was making sure cacao butter was a good option or not, and looking for other options as well, in addition to coconut, avocado, bacon, and butter. Cutting back to uncured bacon is going to be a significant cut in animal fat as it is, and I only occasionally use butter. Although what I get is entirely delicious & I can totally eat it by itself, but I try to refrain from dairy.
