    This looks good, but a little concerned with all of the milk products in it. Not sure if it works with egg protein.

    So it's the casein that concerns you, or the fat-free milk?

    I've read that protein fluff works best with pure casein, as the other types don't actually "fluff." That doesn't mean they aren't still delicious, but it will be a pudding-like consistency as opposed to Cool Whip.

    If you wanted to try mixing casein with egg whites, though, that might work. Just save the yolks for breakfast!

      both. I try not to eat too much dairy since I have Chrohns. So I limit it to butter and full fat yogurt usually.

          coconut creamer? I don't think that is kosher unlesss you can make it with coconut milk.

              couldn't you whip up some egg whites with the protein powder? There are egg based protein powders on the market if you want to completely avoid dairy. Just a thought.

                I actually use whey for my "fluff". I make it in the food processor with still frozen berries. I process the frozen berries and whey protein until it looks a little mealy. Then I start adding a liquid in (either coconut milk or almond milk). I add it really slowly and in small amounts, until it starts to get a smooth consistency. Then I just leave the thing on for a good 5-10 minutes and it doubles in volume. Scoop it out with a spatula in a big bowl and delicious.

                  That sounds delicious. It sounds like a fruit mousse. What proportions of fruit to whey do you use?

                    I definitely don't use a measurement...but best guess....I probably do a cup of frozen fruit to 2 scoops of protein. then just splashes of liquid. I did it tonight with 4 frozen strawberries and 1 frozen banana. so good.

                      I was using a kitchen aid mixer, didn't work with egg protein, and I accidentally put the blackberry marinade in it that had some tamari sauce in it, which was a nasty combination with the egg whites.

                      Whey isn't dairy free. ALthough yogurt and cream cheese don't bother me.

                        egg based protein powder doesn't fluff. It actually kills an egg white whipping, so I guess you would need to hand fold it in. Whey isn't paleo though. I dunno what is better for the old gut though.
