  • 'Noodling' Vegetables.

    Sorry for yet another thread, but I am getting full swing into primality again and enjoying it alot. I've tried Courgette noodles before, by grating them into noodle strips, letting them dry out on a cloth (they don't really dry at all...even with a hair dryer ). I've took them to the pan and they've just gone into a sloppy mess.

    I know the cookbook says use summer squash, but call me silly, but in the UK I don't think i've ever seen one, hey, i've never looked. I've seen butter-nut-squashes about during this winter.

    What are some good vegetables for 'noodling?'. I enjoy cauliflower rice, and i'd love to get a good noodle subsitute on-board, my signature 'no so primal dish' is a great stir fry which of course uses Sherwoods chicken noodles, carb fest eep!

    Carrots, apples, mushrooms, sweet peppers, any squash.
    By the by, for the zucchini (I'm assuming that's what a courgette is? or is that cucumber?) I saute it in olive oil or butter until it's floppy like noodles and eat it like that.

      Courgette is zucchini. Do you just take a veggie peeler and do that?

        You can't noodle vegetables, they don't bite.

        Errrr.

        Naiad's zucchini noodles are tasty.

        Summer squash is the stuff that generally looks like a zucchini, but yellow.
        Most people don't realize how much energy it takes for me to pretend to be normal.

          Spaghetti squash. Mother Nature has done the noodling.

            I take a mandolin to it, then slice it up into noodle width. Or I take a veggie peeler to it and do the same thing. Works either way.

              Zucchini IS a summer squash. There are several varieties of summer squash just like winter squashes (butter-nut, acorn, etc) But zucchini is one of them!

                  2nd. Thanks, Mom! So much easier. They keep well, too, so it makes it easy to always have some "pasta" on hand for a quick dinner.

                      I love spaghetti squash, but if I have none on hand, I use cabbage gently steamed. Just slice it in long strips, and voila! Noodles!

                        Brussel sprouts work this way, too. You can also "noodle" broccoli stalks.

                          Dumb question but have you looked for it? I first heard about it on MDA and didn't think any stores in my area would have it. Lo and behold, they're a staple in every grocery store in my 'hood, I just didn't know since I rarely frequent the squash section :-)

                              Wow spag squash looks great, turns out you can only get it in Waitrose in the UK, I will check my local grocer (bloomin corner shop dealy) but I doubt they are going to have it. Poo.
