I am saving my bacon fat in a mason jar... does it need to be refrigerated?

I refrigerate mine. I figure there are other bits in there that aren't pure fat so it would be susceptible to spoiling.

I keep mine in the fridge, but both of my grandmothers would keep their bacon fat on the counter forever! They would just add to it when they cooked more bacon. I prefer to error on the cautious side and keep it in the fridge. Also, some folks strain it to get any bacony chunks out. I dont bother. I just figure that will add flavor to whatever I cook in the future.

Thanks! I keep adding to mine, too... and don't bother to strain it.

I keep mine in the fridge too. It's just easier to handle as a soft solid than as a semi-congealed goop.

If I think I'll use it in a week it stays on the stove.

We have a jar of bacon grease that stays on the back of the stove.

To all of you who refrigerate your bacon grease, I hope it goes without saying, but a member on another forum I frequent wasn't thinking and took the jar from the fridge and poured some recently acquired grease into it. The hot grease going into the cold jar caused it to burst, sending him to the ER with 2nd & 3rd degree burns on his hands.

I also keep it in the fridge since I don't bother to strain it.

I always wait until mine has cooled off before putting it in the container. I am so glad I can eat bacon and bacon grease again.

I don't bother to strain it and I keep it on the counter for weeks, nay months!, at a time. Not dead yet. Grandma is, but she was pretty darn old when she went.

It is best stored at 98.6 degrees, in your stomach!

I've been throwing out the bacon grease from my daily bacon - ludicrous I know! I am going to start saving it to cook with in addition to olive and coconut oils and was wondering what foods you guys like to cook using your bacon fat
                        ?
I cook eggs in bacon fat, pour any extra fat over eggs when you serve them. This week I cooked burgers in bacon fat. I also make some great cheese biscuits thst called for coconut oil. I subbed BF and they sing in your mouth.
