  • Smoked Salmon

    Hello... a co-worker brought a big huge beautiful piece of smoked salmon! He didn't make it himself and I am wondering how it is usually prepared... if it will have sugar in it. Anybody know??

    Sometimes it does, sometimes it doesn't. You'll usually be able to taste it a bit if it does. I think the thing you really have to watch out for is if it is wild caught or not. Because if it's farmed, usually they add coloring to it and its nutritional profile is waaaay out of whack.
    I don't own a scale and don't care to!

        Oooo....if it's wild caught and doesn't taste too sweet, I'd be chowing down on it! Love smoked salmon on cucumber slices with a dab of cream cheese. Yum!

            Yes usually it IS made with sugar, but I don't believe it's enough to really matter in the grand scheme of things. Unless you're seriously hypersensitive to it, it's probably fine. The sugar is included as part of the brine (wet or dry) as a hydroscopic agent (it pulls water out, like salt) because it balances the salt so you get a milder flavour with a good texture. If sugar wasn't used, the salmon would be too salty to eat, or too wet to smoke well.

              Ya... even if it has some sugar I just can't pass it up! Any other suggestions for how to eat it? Salads? Eggs?

                Salads! Smoked salmon, avocado, cucumber, red bell pepper, salted pistachios, lemon zest, and olive oil. BAM. Best salad ever.

                  I get a locally smoked salmon. It is so good with roasted garlic and cream cheese.

                  It may have sugar as well as nitrites.
