  • Favorite brand of bacon?

I'm wondering about uncured (nitrite free) bacon specifically. What's your favorite brand and, most importantly, WHERE DO YOU GET IT?

I'm trying to decide if the bacon I am getting now is (happy piggies who get plenty of fresh air and sunshine...I know the farm) nitrate free but cured (only sea-salt and brown sugar- it only lasts a few days in the fridge). The good thing is everything listed above. And while there is brown sugar, most bacon has sugar and the lable still says 0g in 1 oz of bacon. So even if I say that means 0.5 g its pretty low. But it TASTES so much brown sugary-ier than regular bacon so I am guessing it is much higher than regular bacon. I baked a whole pound and the sugar carmelized around the edges. Darn good bacon. But I wonder if it is driving my sweet tooth up a bit.

And I get it at New Seasons Market which is a PNW local competitor to Whole foods but takes special effort to get local farmers and they get all their piggies from a farm down the street from me. (at least the branch I get my bacon at does)

I wonder how much sugar they could decrease it by. They will smoke a custom recipe if you buy the whole belly. My friend who's daughter is allergic to all sugars except honey is getting a honey cured belly.

People say I am on a "crazy" diet. What is so crazy about eating veggies, fruits, seafood and organ meats? Just because I don't eat whole wheat and processed food doesn't make my diet "crazy". Maybe everyone else with a SAD are the "crazy" ones for putting that junk in their system.

Kewaskum smoked bacon. It's about the same recipe as most other bacon, but the company that makes it is 15 miles from me, and I like supporting them. And it's a lot better than the more national brands to me. (Sorry you folks outside Wisconsin, you probably can't get it.)

Berkshire bacon, online thru Williams-Sonoma, whenever I don't eat local. But I'm not a big bacon eater (probably a dozen times per year on rare occasions).

Hormel uncured bacon...with cinnamoon sprinkled on it while cooking.
In most grocery stores ~ I'm working towards buying from one of the local guys, but I prefer thinly sliced so it can super crispy.

Pederson's Natural Farms makes a great uncured bacon. I like theirs because they seem to give some meatier cuts than other bacons I have tried.

During Farmer's market season, a local variety from pastured pigs. Otherwise, I use the Central Market Organics (read: store organic brand) uncured bacon or the Hormel uncured bacon.

I usually go for the AppleSmoked Uncured bacon at Trader's. Cheap enough and good and THICK. This last time hubs got Applewood. Seems fine but way thinner.

Starting next Sunday I'm hitting the Farmer's market early on Sunday and hoping to get some there. If not, I'm looking into places locally to get meat/bacon, eggs, etc.
