  • Bacon? Cured meats?

    I see Bacon and cured meats mentioned a lot of this forum and in the cookbook, but also see some things against them as well ie: (http://www.marksdailyapple.com/sodium-nitrite-meat/). What's the deal, are they good to eat in abundance, should it be limited, avoided? Are there certain kinds that are fine to eat but not others? What about cured or deli meats like prosciutto, is that allowed? If so, how do I know what's good to eat?

    You can get uncured bacon with no nitrates/nitrites. That's what I get. But most processed meats you can find will have some nasty stuff in them. You just have to read the ingredients and decide if you want to put it in your body.
