  • the many wonders of COCONUT BUTTER

    The more I'm reading about coconut ("Coconut Cures," "Eat Fat, Lose Fat"), the more I'm in love with this stuff.

    I see the Paleo nutritionist who runs the Balanced Bites blog just posted up a nice entry about coconut butter. This stuff is crazy-delicious, if you haven't had it yet.

                      i think "shingles" every time too.

                      i really wanted to like the coconut manna by nutiva (this is coconut butter, no?), but found it to be too grainy. has anyone tried nutiva coconut manna and other brands? i'm wondering if they all taste the same. i also have 2 pkgs of edward&sons coconut cream that i'll try after the nutiva is gone.

                        you can make your own coconut butter in a food processor - just throw your coconut in there & let it go! i like throwing it in smoothies and sauteeing shrimp in a bit of it with butter - yum!
