  • Veggies for Breakfast

    Not so long ago, I told a friend they were "weird" for eating vegetables for breakfast.

    My breakfast this morning:
    Red onion, yellow pepper, spinach, mushrooms, and spaghetti squash sauteed in butter, scrambled with two eggs and topped with bacon and cheese.

    And it tastes sooo much better than that bowl of cardboard cereal I was eating in front of that friend with the veggie omelet. How could I have been so wrong?

    What vegetables do you eat for breakfast?

    I just had the other half of a roasted butternut squash... along with a pork loin rib, and a bowl of coconut milk + blueberries + a titch of honey...

      lately, on weekend mornings, it's been 1/2 a jalapeno, some green pepper, mushrooms, onions (about a cup of each) scrambled with 4-6 eggs, and topped with about 1/2 a cup of chopped tomato

      plus chorizo, but that's not a vegetable

        I never really liked radishes as I only ate them raw and thought they tasted like dirt. LOL But fried up they are fabulous.

        I have fried cabbage and onion a lot so I like some of that with egg similar to egg foo yung. Pumpkin mashed with butter and a dash of cinnamon is nice with a grilled pork chop.

        Often I use leftover veggies, sometimes with leftover meat/fish or cooked with eggs into a frittata.

            That spaghetti squash combo sounds *amazing*. Why, why did I make mine for dinner last night instead? I like bitter greens in my scrambled eggs (kale, esp.) cooked in ghee with garlic and a splash of tamari.

              I like zucchini hash browns. Spinach in my eggs. Smoothies with pumpkin and carrots.
