  • Anyone have a great PB chicken salad recipe?

    I currently use Mayo and cream cheese to make mine. I wanted to see how everyone made there chicken salad.

    I haven't made it yet, but this is on my meal plan for this week! I can't wait.

      I hate mayo, so I make mine with yogurt.
      Leftover cooked chicken, shredded (1 thigh)
      1/2 c full fat yogurt
      5-8 dill pickle chips, diced
      1 hardcooked egg, chopped
      1/4 apple
      2 tbsp pecans or walnuts, diced
      1/4- 1/2 celery stalk, diced
      1/5 bell pepper, diced
      10 or so blueberries

      Mix it all up and serve on top of salad.
      Life is not a journey to the grave with the intention of arriving safely in a pretty and well preserved body, but rather to skid in broadside, thoroughly used up, totally worn out, steak in one hand, chocolate in the other, yelling "Holy F***, What a Ride!"

          Festive Chicken Salad

          4c chicken
          1c mayo (i use a tiny fraction of that and mostly evoo)
          1tsp each paprika and seasoning salt (herbamare)
          1.5 c dried fruit (cranberries)
          1c. chopped celery
          1/2 bell pepper, minced
          2 green onions, chopped
          1c chopped pecans
          pepper....

          mix dressing ingredients and spices, then nuts and veggies till well incorporated. add chicken and stir. chill for an hour before serving.

            I'm still not happy with the homemade mayonnaises that I've tried making. So, for chicken salad, I'd opt for a recipe that wouldn't use it such as a Thai chicken salad: http://amoderngal.com/2009/06/15/thai-chicken-salad/

                  I use a mix of mayo and greek yogurt, then the following:

                  1 shredded rotisserie chicken
                  1 diced granny smith apple
                  1 cup seedless red grapes, halved
                  1 cup walnuts
                  1 Tbs curry powder
                  1 tsp fresh lemon juice
                  1 cup chopped cilantro

                  The walnuts and curry powder provide powerful anti-inflammatory compounds (Omega-3 and curcumin), the grapes provide resveratrol, the lemon juice Vitamin C, and there are antioxidents in apples too.
