I'd say they are OK to eat. I know at least one recipe in the PBP cookbook has green beans as an ingredient, and they are legumes, so I don't think that PB totally rules out all legume consumption, just the more egregious/toxic ones. I don't know if phytates/lectins/whatever are more or less concentrated in shoots and sprouts, but I wouldn't worry about it. They are delicious and I would eat them if I had them!
