  • Chicken fat

    Is there anything I can do with it / use it for? I used to pour it over my roast potatoes but obviously that's no longer on the menu.

        Render it down into Schmaltz and you can use it for all sorts of things....in a roux...frying potatoes...in savory drop biscuits...for sauteing...etc.

          Oh right. Damnit, my head is not in it today.

          As we can see here per 1 tbs of chicken fat there is aprx 2400mg of arachidonic acid http://www.nutritiondata.com/facts/fats-and-oils/598/2 contrasted with 400ish in beef tallow http://www.nutritiondata.com/facts/fats-and-oils/482/2

          I really don't think that eating chicken fat is the healthiest thing to do. I have been known to drink grass-fed beef tallow straight however chickens are clearly not the optimal choice for health, arachidonic acid being the direct precursor to prostaglandins, leaukotrienes and other inflammatory signaling molecules should ideally be limited and matched with omega 3 fatty acids, as can be illustrated by Evelyn Tribole's extensive aggregation of studies linking omega 6 in excess of omega 3 to health difficulties of all kinds. http://omega-6-omega-3-balance.omegaoptimize.com/

            what about goose fat? Is that as high as shmaltz in omega 6?
            My journal where I attempt to overcome Chrohns and make good food as well

              Not so much. About the same as lard which isn't too too much. Beef tallow is the best of all but for a bit of flavoring on veggies or used in cooking goose fat would be pretty good.

                Before I went primal, I was a big fan of chicken breast too. Now, not so much. As for the chicken fat, you could use it to fry up some eggs.

                    So, is that any chicken at all...or chicken other than free range? What's the level of harm if you're eating chicken thighs? I made chicken stock out of the bones/fat from a bunch of chicken thighs we ate the other night (not free range). No good?
