  • OMG Coconut ice cream

    So I left a can of coconut milk on the refrigerator, and I opened it today expecting it to be all liquid like usual, but it was hard and creamy! IT WAS SO GOOD!!! I'm salivating for more..

    I store all my coconut milk in the fridge for that exact purpose. I warm it up with crushed blueberries and walnuts then return it to the fridge until it gets the soft ice cream texture. That's my ice cream and warm it's my cereal.

      i do that, then scoop it in the blender with ice and a scoop of vanilla protein powder....ice cream....and sometimes crush maca nuts over top

        So today I was finishing the rest of the can, and about halfway trough, I finish the "ice cream" part and under it was WATER! What the hell. I was so disappointed. I thought the whole can would be full of the heavenly creamy goodness. Looks like it got separated. So I threw the liquid out... it was too sweet. Next time I'll do the same thing and only eat the creamy hard part.

              Yeah, can I buy just the cream without water added? Coconut butter, is that what it is? OOOOOO

                No idea but it is good, eh. I eat it out of the can with a spoon while I am waiting for the kettle to boil for my coffee.

                  It's like unpasturized milk, the cream rises to the top, leaving the watery "skim" at the bottom.

                  I've seen coconut cream online, but I'm not sure if it's the same, or more of a butter.

                    Body oil

                    Did you know that instead of eating everything you can put the coconut cream in a bowl, let it stay in the sun for some time until the white cream have separated and sunken down.
                    Scoop out the top level oil with a spoon and you have the best most healthy coconut oil for your skin.

                    This is the island way of making body oil...

                      I have an icecream-maker that I've only used once. I will have to experiment making coconut milk icecream for my kids!

                          I actually just found coconut butter at Whole Foods in the nut butter section. Haven't tried it yet because I'm not sure what to do with it!

                            I have been pouring the whole can into a glass jar, shaking it and then placing it in the frige with the cover on. I have yet to experience the creamy goodness but I have been loving the cold coconut milk for breakfast and in my afternoon tea. If I want the thickness should I avoid mixing it and leave it uncovered?

                              I use this brand of coconut cream. I get it at my local asian grocer for 99 cents:

                              When you refrigerate it, it is nothing but top to bottom custardy goodness. No water whatsover. I mix it with blueberries and a little Splenda an it is Awesome.
