Day 5: no reaction yet. I only managed to eat 3 egg yolks today. I wasn't hungry until bedtime.

That's one of the many things I love about eggs, they really keep my appetite steady and I can go for longer periods without food when they're part of my diet. I suspect it's because they are so nutritionally dense and have pretty ideal fat/protein content.

I'm buying eggs today for my daughter and am SOOOO tempted to start hitting the yolks.....slowly.

Great to hear that you're doing so well with them so far!

Actually, the reason why I wasn't hungry all day is because I did a carb refeed the night before. But eggs are satisfying, and more egg yolks are more satisfying.

The leftover egg whites, both raw and hard-cooked, are building up in the refrigerator faster than my boyfriend can consume them.

If he can't keep up and you hate to waste them, maybe try making some quick meringues since it's a great way to keep them for longer. There are lots of recipes online for both sweet and savory versions and they're a great portable protein snack!

I'm thinking of making some coconut macaroons or other meringue-type cookies for my boyfriend. But he doesn't actually eat that much junk food. Or at least he shouldn't, lol. 2 egg whites makes about a week's worth of cookies.

The issue is that it's just him, me, and the cats here. He's not a big guy who protein loads. He can't eat 6 egg whites a day. I could start a bakery with the egg whites I'm saving up. Looks like the cats are going to have to start doing their part.

              Later...

These are going to make a lot of cookies.

WHOA, those cookies look great! Would you mind sharing the recipe? I could make those to send in my daughter's lunch - finding decent sources of protein that will hold up in a brown sack lunch are rare, especially ones that she'll actually eat! My conscience will only allow me to send so much beef jerky since it's full of all kinds of crap I don't like putting into her body. I've got a dehydrator and will be taking a shot at a homemade version.

That last pic just makes me flat out jealous.

The cookies aren't primal, and judging by the fact that there's probably 2 egg whites in those 18 cookies, they aren't a good source of protein. But if you want the recipe, I'll send it to you.

Oh, my mistake! I was thinking they might be meringue cookies with chocolate chips inside. Whatever they are, they look good!

They are coconut meringue cookies with chocolate chips inside. And lots of real sugar.

You've given me a great thought to try eating yolks to see my reaction. Twenty years ago I had blood tests done by a holistic doctor to determine food sensitivity. It came back that I'm sensitive to egg, beef and oranges. I crave them all. I get the arthritic response in my hands and a patch of dry skin next to my nose when I overindulge in these foods. As part of going Primal I want to try forgoing these foods to see how my body heals. Maybe it's the whites, not the yolks that I react to. I would love that. I think I will need clean primal eating before introducing a yolk experiment. I will follow your journal to see how you do. Thanks!

Good luck with it, calee. You have the sort of non-serious reaction that would be harmless to do a challenge over.

I'm going to conclude this experiment pretty soon, since it seems to be working well. This morning I brought home a 5 dozen box of eggs from the store. My boyfriend stumbled out of bed this morning, and as it came into view, he was speechless for a minute.

He had egg white salad for lunch today (with shrimp and spinach). My lunch:

Not pictured: I had gelled whipping cream for dessert.
