          Good thanks, the first sections a bit heavy, but I reckon it's better that the other one I got, definitely going to be trying some of those sauages recipes, especially the Andouille as there hard to come by over here and the corn beef, speaking of which what cut would you use for that, I thought brisket or topside?

          Also like that the brines are done by per pound of meat not just amount of brine, it's a good book.

              yes brisket is used for corned beef. Glad you are "enjoying" the book..... It's a really good reference.

                            I saw this comment under an article about beer cocktails and thought of you
                            We swear by Cheeky Juice, basically a pint of cider with a glug of gin in it. It tastes pretty smooth and is a short cut to total wazzcockery.
