  • Had dinner here Provo & Orem Restaurants: Utah Fine Dining - La Jolla Groves I had the medallions of beef and cheesecake. They were fantastic. We will be going back.

    • Slept fair about 7 hours. Slow start this morning. Need to get ready for my students defense. Worked ahead on homework yesterday. Need to pack and get ready to go home later today.

        • Slept a bit over 8 hours but light>deep. Mostly packed, having coffee, checked it for flight and found I was upgraded to first class! its a 3 hour flight, so that's great. Have about 3 hours until I have to leave for the drive to the airport. Next post will be that I'm home.

              • Okay Tomi I'm going all in for my home days with Whole30. Started the day with coffee with coconut cream and 2 eggs scrambled with celery, onion, peppers and some chopped meat. I've got a chicken thawing and some sweet potato mash I had frozen a few weeks ago for dinner. Not sure what I will do for lunch.

                • The rest of the day didn't go quite as well, but the pizza and potatoes are no longer in the house! No wine. Fresh start tomorrow.

                  • Got up and went with DH to community gym. He helped me do some weight lifting - machines, but better than nothing. He agreed to be my personal trainer. Drinking CWCC and getting ready to go to grocery store. Chipotle meatballs with zucchini noodle for dinner. Set out some uncured bacon to cook and crumble for easy adding to eggs. Cleaned out bottom freezer and found one oopsie bread left - will use with fried eggs when I add dairy back in. I'm thinking that will be sooner not later - I like my butter, sour cream, oopsie bread, and blue cheese.

                    • I hope you're whole30 for the days you're home goes smoothly. It can be tough the couple days in the beginning. I do miss butter for sure! Eggs are ok cooking in olive oil........ but lots better cooked in butter!

                      • I've been using bacon fat. I've got some uncured bacon stashed from meat deliveries. I upped my eggs for the delivery coming Sunday. . Just got back from grocery store - I practically bought out the produce department! Tomorrow I'm making a mild chicken curry in the slow cooker with cauliflower rice. Today I'm going to make mayo and some scotch eggs to have in the fridge for snacking.

                        • Chipotle meatballs over zucchini noodles was good for dinner. Mixed up some avacado with cherry tomato and vinegar for a side. Made scotch eggs, packed two and some of the avacado tomato mix with cherries for lunch tomorrow. Epic fail making mayo. Will try again using food processor with drip hole in food shute instead of blender next time.

                          • I still haven't attempted mayo. I tried to make Caesar dressing once.......... yucky! It tasted like anchovies in olive oil and a little seasoning. I'm too scared to try again. Olive oil is expensive!
