    I've got a recipe for primal muffins that includes carrots. Probably still not a good idea to eat regularly, but it must come in lower on the sinning meter... LOL! Last time I made it I put in no added sugars. The various fruits were enough.

    I like baking it (or slow-cooking it) and combining it with cooked apple (or apple sauce for a quick version), butter and garlic. Easiest way is to sautee the garlic and apple very slowly in the butter tillthey're nice and soft, add the squash and mash. A little thyme in there is nice too. Cinnamon or pumpkin pie spice instead would probably be nice too. Very yummy stuff.

    They are nice, aren't they? I do try to have them just as a special treat though. They're not exactly low-carb, but at least they are grain and gluten free.

        • Ouch on the injury! Not nice. Must be a good one if you needed the pressure dressing for that long. More wishes for speedy healing sent from the north.

          I might just have to make some of that Brazilian cheese bread. Yet it sounds dangerous. But in a good way.

          • Chipotle meatballs with shredded zucchini and some leftover sweet potato for dinner. And wine. Nothing on TV, graded some presentations, read for about 3 hours. Caught up on journals. Put off paper until tomorrow, then I've got to stop procrastinating. Have several home things to do on top of the paper.

              Thanks Greensprout. My thumb is definitely missing a chunk! The bread freezes well - just saying.........

              • I always manage to take a chunk out of my thumb or a finger when using a grater. I should probably avoid mandolines... Hope your hand gets better quickly.

                I just remembered with relief that I fed the last of the cheese bread to visitors. Yay! One less thing to tempt me as I try to go VLC for the next little while.

                  • Did not sleep well last night. Awake off and on. DS off to work at 0400 and DH at 0500. Dozed off and on until I got up at 8. Coffee with coconut cream, thinking of eggs..... Leftovers for dinner.

                    • Tummy is off today. Went back to bed for an hour. I've notified the clinic I won't be in this week, so I've rearranged my to do list. After reading Tomi's journal I need to start tracking my food again. I just hate doing all the measuring - reminds me of WW. I'm home this week, then travel for 10 days, home 3 weeks (except for 2 days away with DH for anniversary), then travel for 9 days and that gets me to the new year! I'm hoping for a better year in 2013.

                        boy....... I can agree with that. 2012 has been good - but I could definitely go for some personal improvements! Shooting for July to see my goal weight of 135. In the meantime I'm hoping for some hiking on the weekends! Winter is our 5th wheel season - so I'm starting a list of possible hiking trails near our normal weekend spots. Hopefully winter on the Oregon coast won't be too cold and blustery!

                        counting on being empty nesters before the new year also! That would be AWESOME! well - empty nesters who offer free storage space.

                          Okay Tomi - we are holding each other accountable! My goal weight is also 135 and my 52nd birthday in 6/29/13. Seems like we are on the same page. Today I was up to 170.2 - so going the wrong way for sure, but puts us close to the same starting point and you are much more on track with exercise than I am. Are you in?

                            Thanksgiving is over for us. It was very early this year, only a week after my birthday. Three birthday outings, two Thanksgiving celebrations - it was a little crazy. But you're right, the cheese bread would be a good feast food.

                              So DH surprised me with a Striiv. A bit pricy, but so far it's accurate, easy to use, and had built in motivators.

                                You're ON! My birthday is 7/25 --- and also my 52nd. Thats close! But you are a bit ahead of me. I am at 183 today.
