  • Home - yeah. Set out 4 sausages from the last grass fed meat delivery for tomorrow. It will feed son and me. I'm hoping to get a pork butt tomorrow so I can make Nom Nom Kalua Pork. I got my Hawaiian red salt while I was gone.

    • Weight down 0.2 lbs today - not much but it's the first time I've not gone up when I travel! Starting the 21 day challenge today. DH brought me coffee in bed (but with sugar and low fat milk). I waited about 45 minutes and pored it out and went to make "a second" cup with coconut cream. I didn't want to hurt his feelings.... I like what Mark says about novice excercisers - even 5 minutes is a workout! When everyone is gone I'm going to do some sprints in the backyard and let the girls chase me, so play too! Have to organize the freezer before more meat comes and write a paper today, but have time to be lazy for another hour or so (it took 9 hours of travel to get home yesterday). Slept great last night though. Oh, new resteraunt in SLC airport - Cat Cora's Kitchen. A bit pricy, but the chicken chimmachuri sandwich with tomatoe pesto without the bun and okay I had the homemade chips, but they have sautéed spinach was fantastic. I'm looking forward to my trip in February.

      • I have to start noting what good Paleo-friendly restaurants there are at the various airports and cities, where I travel often. I'm always on an expense account, and the owners hate business travel and are very understanding and appreciate that I do it. So they do not really care if I go to nicer restaurants. I tend to seek out good steak houses, because the meals are often a la cart, and they typically have Ten ounce filets. That and a big salad and it's as Primal as is likely to find. Even if I am with others it doesn't raise eyebrows or invite questions.

            • I've tried cappuccinos with coconut milk. Not so crazy about it. My normal coffee I drink black, but specialty coffees I now take with half and half.

              Congrats on a weight loss while travelling! That's pretty impressive.

              Hubby's not against trying a slow cooker, but we're only going to be gone four days, and our restaurant expenses will be covered, so it's not that urgent. Still, we're driving, so I can throw the slow cooker in the trunk and decide when I'm there. It will depend on the choice of nearby restaurants, I imagine.

                • Rained, so yard is smooshy. Ran inside and dogs got very excited chasing me. Probably just at 5 minutes. Lifted heavy meat cooler.

                  • Other than finishing the fish sticks that were calling my name, I did fine yesterday. Now that the fish are gone, today should be easier. I put two free range thigh-drumsticks into the mini crock with sun dried tomato, roasted red pepper, basil, salt, pepper, and a bit of veggie stock. I plan on making garlic mashed cauliflower to go with. I've got to get my butt moving - slept great again (could it be the lavender oil from Provo?), but that means I also slept in. I need to do errands this morning (bank, groceries) because I've got student phone calls and a board conference call for one of my professional organizations this afternoon. Today is a mix of FT job and home chores (also need to do the bill thing and plan what I'm going to pack for lunch tomorrow). So off to get ready to go out.

                      • Finished all scheduled for today except for two student calls that are later tonight. DS didn't know the "potatoes" were cauliflower instead! I've had coffee with extra coconut cream, a bottle of periere with lime, about a cup of cauliflower mashed with butter and garlic, a chicken thigh with skin cooked as described above, the sauce with mushrooms, 12 oz of club soda with lime, and about 8 oz of broiled Brussels sprouts tossed in olive oil, salt, pepper, and 1/2 a lemon juiced. Feel pretty good even though I'm low on everything.

                        Picked up a pork loin when I was out and I'm making kaluah pig in the slow cooker for tomorrow lunch and dinner.

                        • Pedidoc, I've been reading along for a while now, and must say I'm very impressed by your organization and managing to stay on top of everything both at home and on the road. Working, teaching, studies, and running the household continuing to stick with your primal plans; I thought it was busy here, but I've got nothing on you . From one nurse to another: you're doing fantastic .

                            Thanks Greensprout! This week is one where I know I will struggle. I'm covering the clinic Tuesday, Thursday, Friday, and Saturday (his mom's 80th birthday). I'm also trying to catch up with summer class. So positive comments are very welcome!

                            Nursing in Canada is a bit different then here, right? The Canada nurses I know we're rural and are much more similar to NPs.

                              Not so different, from many Canadian RNs I've known who've worked in the US. I think the biggest differences are how our healthcare systems function, and the fact that hospital nurses here are all unionized. Many worked in Texas and loved it. I've worked mostly as a military nurse, in both acute care and clinics, plus training and admin positions, but also a number of years in trauma centre adult emergency and surgical ICU as well as community hospital (small town) ER. And flight nursing, which I'm doing now, but from the coordination side. Still doing the odd casual ER shift when I find the time on weekends.

                              Regardless, balancing it all with family is a challenge. I travel, but hubby is on the road nearly every week. We've also both deployed, so dealing with both work demands and raising 2 teenaged boys singlehandedly for sometimes months at a time can be draining. I have to say that since going Primal, it helps. I'm no expert, but I do feel better and plan to stick to this for the long term. Hubby, too, which is pretty awesome. We're aiming to live up to the "live long, drop dead" motto

                              • Wish hubby was on board - slowly, steadily reeling him in.

                                When I'm in EP, I work as an intermittent pedi provider at the military hospital. Constantly amazed by the resilience of military families.

                                I think I do better with hubby traveling than he does with me traveling. Isn't that the way of women and nurses - just make do and keep on plugging!

                                I can not imagine trying to raise our 4 alone. Even with them being older, there are still issues that require both of us!
