  • Up at 0300 my time. Dinner was salmon (tons of vinegar made it edible) and sweet potato with butter. I'm going to do 2 chickens in the slow cooker later today. I've got a bunch of bell peppers so will probably cut some strips and have them too.

    • That reminds me I have a sweet potato sitting on the counter...very lonely it looks...

      I must think about getting a slow cooker. I always hesitate because I live in such a small home, but I think it would save me a lot of money in the long run.

      • I'm doing two chickens with lots of garlic, lemon, and thyme right now. Tomorrow chicken thighs with tomato and olives. Pork loin Wednesday. It gets a break Thursday when I do ribs in the oven. Sounds like a lot, but remember I'm cooking for 3 and want leftovers and trying to wean the "boys" from frozen food. I fly out Friday, teach 12 hours Saturday, fly home Sunday - in time to get my first meat CSA delivery.

        • Just finished making commuter egg squares with sausage, bell peppers, onion, spinach, eggs and pepper jack cheese. They smell yummy. Stopped by my parents after the dentist this morning (got my real crown) and gave them 21 days primal blueprint. Mom had a few questions, but she is ready to try. I've got to schedule time to help her clean out the pantry.

          Update: it tastes great too! Will portion out and freeze some for next week.

          • Chicken is flavorful and moist, pumpkin with walnuts, bell peppers, green tea with pomegranate. Mango for dessert.

              • I'm not a fan of cleaning the muffin tins, so baked it in 9x13 and cut into squares.

                • This morning, I put chicken, tomato paste, green olives in the slow cooker. Was going to have egg thing for breakfast, but I'm not really hungry. I'm going to pack for lunch with some cottage cheese and mango. Clinic today - hope its not too crazy. We may be in the sweet spot between school immunizations and winter illnesses. . I know I've got at least one student and probably two - but if they are the ones I had two weeks ago they are good and a big help.

                    • Dinner was good. Slept like a rock. Put a pork loin in the slow cooker. Thawed two racks of ribs. I'm going to season them with a rub today and then cook them in the oven tomrrow. Have enough of the freezer emptied out for the meat CSA that's coming Sunday. Errands today.

                        • Trying to (1) clean out freezer space and (2) leave enough real food for the "boys" when I'm gone Friday-Sunday. I've managed to just ignore the grocery list they left me. No comments from either one yet. I'm waiting to see what happens when they run out of soda! We had several wheezers yesterday, so I'm thinking You might get busy too. of course it's job security!

                          • Pork loin was great. Had it with peppers. Drinking quite a bit of green tea with pomegranate that I've been brewing.
