  • I might be hallucinating, but was someone looking for this custard recipe? From sonofgrok that is no longer? I found it on naiadknight's journal and am putting it here for my own future reference. This would be great if I had to take a dessert somewhere.

    Do you miss puddings and custards in your primal world? We have a local egg custard here known as “Flan” and for some weird reason, I have been craving it. Here is a custard recipe that I have been putting together. I finally got the proportions perfectly where I like them. If you like yours sweeter, all you need to do is add more bananas! This recipe is about as simple as it gets.

    Ingredients:
    - 2 bananas
    - 1 can coconut milk
    - 3 eggs
    - Cinnamon

    Directions:
    1. Combine all ingredients except for cinnamon in a mixer and mix well.
    2. Pour into custard or souffle cups (coffee cups or other oven safe containers work fine if you don’t have custard cups).
    3. Sprinkle top with cinnamon.
    4. Bake in oven at 350 degrees for approx 45 minutes. Custard will balloon a bit and you may see some liquid… its ok, it will work itself out.
    5. Chill.
    6. Serve and enjoy.

    One thing that drives me nuts about these recipes is that they don't have serving sizes. This one doesn't even tell you how many cups you will need, their approximate size, or how full they should be. I must remember this if I ever start posting recipes anywhere. Also, some nutrition info would be good.

    • That was me. Naiaidknight mentioned it while we were talking about PIE, but didn't have it on hand at the time. I'll have try it when I get some more coconut milk (used the last can a couple of days ago ). Doesn't sound like it could be much easier, does it?

      • I wonder the same thing about Fatkitty. I buy $pecial diet food from the vet and she gets about three quarters of a cup a day. I've done this for several years now and she's still tubby. Somebody somewhere on this site talked about special meat and organ based food that helped their cats (was it you?). My mind is like a steel sieve...

        I'm wondering if better food will make her more energetic. It certainly has worked wonders for her human.

        • That probably was me, David, because I went through an excruciating process getting them off high carb food. I learned the hard way that even the food the vet sells can be bad. I am guessing that special diet food contains fillers and fiber (like diet food for humans...) I went through a long process of reading labels and lots of waste - finally they are eating a high quality grain-free kibble occasionally (maybe twice a week) and the rest of the time Fancy Feast Classic from a can. FF Classic does not contain wheat, corn , or soy. There are several varieties, luckily they like them all. All of the other types contain wheat gluten, as does a lot of cat food - even high end stuff. Hmmmm. I read somewhere that in Sweden or one of the Scandinavian countries it is illegal to add grain to cat food. Now, I'm not a big fan of laws and regulations but I am glad someone is standing up for proper nutrition for cats. And yes, it has made a tremendous difference, and almost right away. Slim Cat, who was bone-thin, has put on muscle - lots of muscle - a friend stopped by and asked me if he was the the same cat, said he looks like a panther now. B&W Cat, formerly Tubby Cat, had to be renamed because he is similarly remuscled and his belly is gone. I feed them fish and any kind of meat that I am eating. I'm going to look into getting some wild organ meats this hunting season. And there are a couple of people who used to be on here that feed their cats totally raw organ meat diets. Wish I could do that, but it is pretty much of a stretch here.

          Sorry I'm getting my people mixed up, but I hope the recipe is helpful. I might have to make that! But not any time soon. Today I had not one but two pieces of fudge at the farmers market. One was okay but two put me over the top - sugar and I do not get along. Yes, my name is Siobhan and I am a sugar addict. Can't go there.

          I also got one last pint of ground cherries, am going to enjoy those with a bit of cheese. I thought they would be sad remnants from the peak of the season, but even though they are smaller, they are intensely flavored. Oh yeah.

          Loaded up on all kinds of veg and some grass fed ground lamb. Gonna make moussaka.

          • Been cooking for two hours and still haven't made moussaka. Had a great lunch of fish in panang sauce (the sauce that won't die...), brussels sprouts cut off the stalk (love buying them like that), a few beets. I did roast the eggplant for the moussaka and also roasted some red peppers. I'm just going to throw in every spice I have - cinnamon, mint, everything. Also going to put zucchini in it. Better turn out well because I'm going to have a boatload!

            Oh, and I just found out the x-ray guy is an avid hunter...

            • You might think your life is boring - sounds awesome to me! Time for yourself and doing things - can tell I am a stay at home mom huh!? I love the sound of your food - you do such different stuff than I do and it helps me think outside of the box as far as veg goes. I have an eggplant languishing at the back of my refrigerator waiting for me to pluck up the courage to try it out Better do it tonight before it turns to mush! May just roast some veggies and do a roast chicken too. It is only about 44 F today and it is a good day for jackets, hot drinks and roasted food. Mmm, DH will be delighted to walk in to the smell of roasting chicken. Maybe I can even try out the apple crisp that I found on foodloverskitchen ... DH will flip I love the sound of your cats doing so much better on their new diet!

              Many years ago I adopted an old cat, she was about 15 years old and was not in the best shape at the time. She had some issues with her hips and could not walk very well and her back was almost bald. I changed all of the cats diets for my neutered male who had issues with his bladder and lo and behold, Mrs. Cat suddenly got a new lease on life too. Her hair all grew back in and she was able to walk normally again and jump onto things again. The new diet was ground beef heart and various other 'undesirable' organ meats that I got from the local butcher for next to nothing. It also included some baking soda and rice - but the difference in their health was remarkable! Mrs. Cat went back to being an amazing huntress and presenting all kinds of half mangled critters at all hours of the night! Cats are so much fun to have around!

                Actually, I have never liked custard. Or cream pies. Some puddings are acceptable. So this, at least, is one thing that is not causing me any struggles at all.

                And I hooted out loud at that one too! Does he hunt cougars?

                I have probably forty different bottles in my spice cabinet. I shudder to think what would happen if I combined them all in one dish.

                Moussaka sounds like a great idea. I have a big eggplant waiting for me. I was considering just slicing, broiling and adding a tahini sauce a la Ecks.

                  • Oh dear! The Gramps is definitely not in the running! But what if he was a really cool Gramps Kidding! Avid hunter sounds good! At least lots of good meat around one would hope Have you ever been hunting Siobhan? I have not hunted myself - but went with some friends who were bow hunting elk one year! Amazing experience - hiking in dead silence for hours, creeping around the mountains finding spoor, testing the wind, waiting then hurrying, and the ultimate moment where the main hunter was up on his knees with his bow ready and taut, with an elk in his sights, and then the 'let down' of realising that he couldn't get a clean shot and letting it go. I wish I had had a camera to take with me. I hung out for about an hour on the mountainside soaking up the sun, smelled a bear really close and had a really big adrenalin rush, so that when the two guys came back for me I was ready to go up and down the mountain again Sorry RAMBLING on your journal!

                      Hoping to get some organ meats from X-Ray Guy. He will probably think I am a total wacko when I ask him for his hearts and livers. Never been hunting myself and can't say I relish the thought. Not really into weapons. Wouldn't mind some wild game though. If I speak up, I can probably purchase or barter for some this fall.

                      The moussaka turned out great. I mean really great! Too bad I don't really know what I put into it since I don't measure anything or follow a recipe. Actually, I wasn't going to make it this evening and had put everything away when the phone rang...work...they were desperate...last minute call-out... which means no moussaka-making for me for a few days. So everything came back out of the refrigerator and got baked. I put some zucchini in it. Personally I think it is really good to put both zucchini and eggplant in. The lamb is great, grass-fed local stuff. So I have something tasty for the next few nights at work.

                        • I just read my last post and laughed at all the possibilities for irony and satire. When I was writing it I didn't even think of that! I had better just behave myself and stop thinking about organs and such.

                            You will not believe what happened today. I can't decide if I'm a complete horn-dog, or I missed the chance of a lifetime. RT lady came by today, the one with the great ass. Man, that ass. But forget about her ass. She came by and said she heard I hunted. Well, yeah. Since I was ten. Then she said, she wondered if I could get some organs from me. Super long pause. I mean, organ meats. Hearts, livers, you know. But she turned bright red and I SWEAR, she was fighting off looking at my package.
                            I was a total idiot. Just kept thinking about that blush, and how some blondes blush all the way down, you know. I bet her breasts are as great as her ass.
                            I THINK I just said sure. I hope I said something.
                            But man, how are you supposed to think when a hot lady says something like that to you?
                            What do you suppose she wants with hearts? Damn, who cares? She can have 'em all!
