"Freedom from fear" could be said to sum up the whole philosophy of human rights. - Dag Hammarskjold

    • Having kind of a crappy day for some reason. My first real day off in a while. After being up in the night, I went back to sleep and got a solid 5 1/2 hours on top of the 3 hours I had already slept. Decided to go to the food co-op and get some real food, which I did. Got some very good deals on organic stuff that was in the bargain bin and also on sale. Five pounds of organic onions for $2.50, last of the local honeycrisp apples for $1.79 a lb. Sign me up! I had some pork, sweet potatoes, and roasted vegetables from the hot bar and immediately started to feel bad. What's up with that? All the ingredients are listed, and there was nothing objectionable. Anyway, I went to the cooking/gourmet food store and got two chocolate truffles and a coffee. Felt marginally better after the sugar and caffeine, which is sad. Browsed the local indie bookstore but felt too crappy to enjoy, so I came home. The lemon olive chicken is in the oven right now, and the slow cooker has bone broth going. I'm going to make bobotie at some point because it is just too delicious to not make it. I will have a lot of food prepared and that will be a good feeling. Along with the bag of leafy greens I will have meals for several days.

Can you believe it is February? I think winter is over, at least for us here in mid-coast Maine. It is still cold, and yes, it will snow. But the air has a completely different feeling. I noticed it the other day. I think the harsh bitter extended conditions are over for this season.

I feel like writing some stuff about work and what I am going through there. One of my co-workers is trying to drink himself to death. We had to resuscitate him the other night. This is bitterly difficult for me. I can be professional and do what I need to in the ER and the ICU, but honestly I can't just leave it behind when I walk out of the room. I have the entire gamut of emotions, from feeling terribly sorry for him, wanting to help, feeling guilty, and also tremendous anger that he is putting us through this. I'm trying to put it out of my mind, but at the same time I need to work through these feelings and not bury them away to cause trouble.

      • I'm sorry you are having a difficult day. Your experience after eating what you thought was clean happens all the time when I travel. I wish they had to list everything they cook with. The work situation is tough. Of course you care. Unfortunately until he is ready to change all else will fail. Sounds like you need to mentally put the issue in a box, seal it, and had it to God. Surprisingly simple, but effective when there is nothing you can do. Let me know how chicken turns out. Hope the day gets better.

        • Thanks for the kind words, you are right - this problem is so far beyond a frail mortal - it is one for the universe.

The chicken is fabulous. I used the Bon Appetit recipe (from JudyCr) but instead of cooking it as written I prepped everything in a skillet and then put it all into a dutch oven and left it in the oven at 325F for 1 1/2 hours. Something magic happened during that time and the sauce became so delicious. Also I added more garlic than called for - I put in four or five whole cloves in addition to two minced cloves because I thought it would be nice to have some lovely soft cooked garlic to eat with the chicken. I was right about that! I ate some and have enough left over for three more meals. This recipe is a keeper.

          • I hope your winter is finished. I will be in Boston in March for a week.

            • That chicken does sound fabulous. Will have to try it when I get my hand back and can lift the Dutch oven.

As for winter, we have far to go. Still -20C, and expected to have below average temps till at least late in the month. Sigh. Even yardwork usually can't get started before May.

              • Printed out the recipe and wrote in your additions. It's on the menu for when I get home.

                • I was just thinking about the chicken recipe and realized that I have never had cooked lemons before. They are wonderful! I used a Meyer lemon, and it became very tender and completely non-acidic, just a mild lemony flavor. Not too often that an old foodie like me finds a new taste sensation! But yeah, the recipe is easy but not a broken hand recipe.

                  • I don't think I mentioned that I used chicken drumsticks because that is my favorite bit and even the organic ones are reasonable.

Just put a batch of bobotie in the oven, smells divine! I am really spoiling myself today.

Earlier this evening one of the per diems at work texted me looking for hours and I happily gave up Tuesday night. That means I have a full week off work and only used one day. I really need it; it was heaven-sent! Ah, the power of prayer!

Oh, and I don't remember who turned me on to the Redneck Tennis Racket (battery operated bug zapper) but again I am eternally grateful. That device has changed my life, I am serious!

                      • Well, it's fairly warm for winter. The temp has been getting into the 40's. Those pesky things seem to be able to hatch whenever they want to. We've had a fairly long stretch of decent weather, a week or so, and the creepy-crawlies just love that.

Funny how I acclimate to cold but not to heat. When the temp gets into the upper 30s I have to abandon my coat or die of heat stroke. If I am outside for a long time I need a coat, but for running errands I wear fleece vest and a long sleeve shirt. In the summer though, I never get comfortable when the temp is above 85 or so. I always feel sort of sick. The really bitter cold, the single digits, I don't get used to, though. That is just sheer pain.

Guess I've got the weekend off PaleoCon. I was less than thrilled with yesterday's presentations and they have decided to not post any today because of the Superbowl. (Sorry, I don't get that.) I wish they would have posted the stuff and left it up an extra day instead. Oh well.

Didn't sleep too long, maybe 5 hours, but I feel good. Had a coffee. Not hungry. Of course I ate dinner late.

                        • Got hungry and had some bobotie. As is usual with ground meat dishes, it is tastier now. I have been thinking this recipe would make good paleo jerky or energy bars. I was looking at the ingredients of Epic bars - bison, cranberries - and think the combination of beef, fruit, and nuts is very similar. I would leave out the eggs for jerky.

Cleaned out the bird feeder and put out some new suet. I hope the birds will thank me. It is cloudy, I wonder if it is going to rain? I really need to get some exercise today, for one thing that will help me get out of this funk. I am very tempted to drive to Freeport (about 45 minutes away - L.L.Bean town) and do some shopping, which is ridiculous. I need a shopping trip like a hole in my head.

                          • Tip for Today

Poop. You should be doing it regularly and easily. If you're not, work on fixing that. I've had pets most of my life, and while they are good at communicating, they can't say, "Large Hairless One, that new food you are buying gives me a bellyache." But their poop tells me that something isn't right. And any mother who has changed countless diapers will tell you the importance of poop quality.
