    • Tuna and cottage cheese, yum!

      How does one make ghee?

Pixie cuts. 'Nuff said. At least I was young enough not to care. My mother let me move up to a page-boy cut when I was a bit older. She refused to let me have long hair or pierced ears (both reactions to her own childhood). Two guesses what I did after my parents broke up and she wasn't around anymore...

It does take a while to get used to the compliments. I'm a lot like you, the fair-skinned WASP, neither particularly pretty nor particularly ugly (my avatar is a very flattering shot, why do you think I use it? LOL) and rather unused to fielding compliments. After all the pictures taken of me yesterday, I am thinking they are undeserved... Or that I should still be wearing looser tops, but that gets tricky in the summer. Oh well. One thing I try not to do is argue with a compliment. That isn't what the other person wants to here. Even if I do think they're wrong...

      • Managed to spend $40 at the grocery store even though I didn't need anything. Sigh. At least I got some cat food. Made spaghetti squash Alfredo for lunch. It was just okay. I didn't cook the squash in the microwave properly, next time I will use the oven. Part of the squash was overcooked and mushy and part wasn't done. The really good part was the chicken sausage that I fried in butter and garlic. Now THAT was good. Maybe I am just a Meat Girl. Not proud of that, but it seems to be the case. Not ashamed either. I assume the squash seeds are also primal and they are toasting up in the oven right now. I do love squash seeds.

Okay, just took them out of the oven. Now we're talking. These are mighty tasty.

I was going to try a zucchini crust pizza tonight but I think I will hold off since I just did the squash. Will stick with a simple dinner. Maybe something else fried in butter and garlic. Can't think about food now though, too full.

A weird thing happened. I have misplaced one of my bras. Since I only have two that fit, it is kind of a big deal. And I pretty much never lose anything. I've looked all over, no luck! But it is also becoming obvious that I am soon going to need a smaller bra. The 38 needs to become a 36 within a couple of weeks if I keep changing. So maybe it will work out. Sure wish I could find that bra, though, it is strange! What a thing to lose.

Just got an idea from eating the seeds. Maybe the spaghetti squash would make a nice pizza crust. I'll bet it would cook up fairly crisp if I squeeze out the water. Add some egg, maybe a little rice flour to help it hold together and Bob's your uncle. I found a nice organic no-sugar pizza sauce. I thought I would try the rice flour since I would like to experiment with different things and I found one with only one ingredient - rice. Kind of expensive as you can imagine - $5 for a small box. But I won't ever use very much. I suppose I could make my own - just grind up some rice.

Although I am experimenting with cooking these different things, I am really leaning towards really simple eating. Just simply cooked meats, plain veg, fruit. That helps keep the cost down, for one thing. Just adding some herbs and spices and heat seems to be more efficient in a lot of ways.

I've done an awful lot of work today. I had the whole car filled with stuff for the food bank, the thrift shop, and the used bookstore. The people at the bookstore were really appreciative and that made me feel good, although I don't think it is right to congratulate oneself for doing things like this. I would like to tackle some more stuff, but I really need to rest my back.

I got some organic apple cider vinegar with the idea of making fake kombucha. I love the stuff, and it is bloody expensive. I'm not going to start making it, either. I don't need any more projects. I thought I could make some tea, experiment with adding cider vinegar, a little stevia - maybe I can get that vinegary, just a hint of sweetness that is so addictive. Of course mine won't have the probiotics, etc., but it will also cost a few pennies instead of $4.

        • Well, I made the spaghetti squash pizza and it was good. I don't know if anyone else would enjoy it, maybe too idiosyncratic, but I will make this again. Does it taste like a wheat flour crust? No. Does it taste good? Yes. Did I measure anything? Of course not.

          Spaghetti Squash Pizza Crust

          Spaghetti squash, cooked
          Parmesan and mozzarella cheese
          One Egg
          Salt, Pepper, Italian Seasoning

Heat oven to 375 or so. It is easiest to use parchment paper - place on baking sheet and grease with oil.

Mix everything together. Shouldn't be too watery, if it is, add more squash or cheese. Press out mixture to desired shape and thickness. Pop it in the oven and check after 25 minutes. It will be firm, like a pancake. You might want to flip it over and bake for five minutes on the other side. Then put your toppings on. If you are using meat or veg, they will need to be precooked and warm. Bake until the cheese is melted. Enjoy.

It is an eggy, cheesy kind of flatbread. I will make this again, and it could be used for many different things. Could actually be used for a sandwich. You could cook it longer until it becomes crispier and use it like a cracker.

After buying the rice flour, I forgot to use it. Didn't miss the carbs. I imagine the recipe would come out crispier. I liked the soft texture - is it okay to admit that it reminded me of bread? In a good way!

          • On a roll now. My fake kombucha - 8 oz tea, 2 tbsp raw apple cider vinegar, 1 packet stevia, water to make 16 oz. This is probably too weird for anyone else, but I like it and it is a way to get vinegar into my diet. It is also inexpensive.

Okay, this is bad. I have been fantasizing about my spaghetti squash bread thing with maple syrup on it. Just say no.

Although I slept this afternoon, I am still tired....zzzzz........back is very good, though. Just a whisper.

            • That is so good to hear! I will admit that I still have flashes of doubt, despite the truly awesome benefits I have experienced. This way of living is so radical compared to everyone else. And to be an unrepentant meat-eater omnivore/locavore is just too weird for most people, who think they are saving the planet by ordering cheese pizza from Dominos.

              • Another squash recipe to try form Siobhan! I made your zucchini thing last week, and really liked it. Hid the leftovers from my family so that I would get them (cook's privilege, I say!)

                • I'm glad you liked it. Now that I didn't use the zucchini I bought for pizza crust, I can make more zucchini thing. I bought some cottage cheese, thinking I might try it in the squash/flatbread thing. I'm definitely going to tinker with that recipe and get it right - probably just my own taste, but it was really good and something different in terms of taste and texture.

Can I admit that I've eaten 8 or 9 pieces of bacon this morning? Had church this morning, ran to the chiropractor, was starving, went to food co-op where they had a stack of bacon waiting for me to eat it. I went a bit wild, I will admit.

                  • My fake kombucha tasted horrible this morning! Yuck. Have to work on this. Luckily I had some real kombucha. Had half a cantaloupe, am thinking smoothie now. Kind of tired. Lots has happened today, work stuff, maybe finding a new home stuff. Can't process it all now. Chiropractor kind of wore me out also. Back there tomorrow, whew.

                    • Okay, my latest squash/cheese thing is in the oven right now. Very nervous. I hope it is edible. Squash, cottage cheese, parmesan cheese, 2 eggs, salt, pepper, italian seasoning spread out on a pizza pan.

Hey, I found my bra! It was hanging on my coat rack under a coat! Why did I take off my bra in the hallway? What the haitch? Hopefully I didn't take it off in the hallway, I happened to have it in my hand and hung it there for some reason. Or I could blame the cats. Also found my protein powder in the freezer. Huh. Might need to talk to my doc about short-term memory loss.

Got some coconut cream at the co-op, delicious! It will be no problem putting that in my coffee. I could drink it plain. It does have sugar, unfortunately, but very little. One gram per Tbsp.

                      • Okay, that pizza crust idea sounds really cool. I will have to try it. Soon.

I used to drink apple cider vinegar for my arthritis. I forget why I stopped. Would mix it with water and some Sugar Twin. (I know. Bad girl.)

                        • Verdict on squash/cottage cheese/egg thing. Not pizza crust. However, it is delicious. More like an omelet. I could cook this like a quiche in a pie pan, or like omelet muffins. Actually, it would be very good topped with tomato sauce and cheese and stuck under the broiler. Just not actual pizza.

Since I like it, I put the recipe in paleotracker - it is quite nutritious. Funny how the nutrient profile of food changes when the empty calories are removed. Eggs are nutritional powerhouses and cottage cheese isn't too shabby either. Squash has carbs but actually not as many as you might think. Wonder how this would be with sweet potato? Anyway, it is very filling.

Will have to use a harder cheese - mozzarella or maybe a mixture of cheddar/jack - if I want it to be usable as pizza crust.

                            • Did an incidental 16-hour fast. Finished eating at 6 PM last night and due to an early chiropractor appointment did not eat until 10 AM. Grazing in the evening used to be my downfall; now I don't even think about it. How did that happen?

A really good thing happened today. I have been just a little sad that my favorite jeans don't fit any more - a pair of Eddie Bauer jeans I got at our beloved Maine discount store, Renys. They fit well, look nice, and they are gray, which is a little unusual and I love gray clothes, especially for the bottom half. But now I can take them off without unsnapping them. I stopped at Renys this morning and against all the odds, they had an identical pair in size 10. They fit great and cost a whopping $15. What a stroke of luck!

Had three pieces of bacon and a small piece of havarti cheese with dill to break my fast. Now am enjoying a kombucha, which is thankfully on sale.

                              Life is good.

                              • Had a smoothie - goat milk, protein powder (chocolate), 1/2 banana, blueberries, coconut manna. I realized that I have stopped adding stevia and don't miss it. When did that happen?

Also had the last of my squash/egg/cottage cheese thing. Might have to go to store and get another spaghetti squash. I could make some good stuff to take to work the next few days. Cottage cheese, unfortunately, has unpleasant stuff like guar gum in it, but it seems to be very, very little. I will chalk that up to 80/20. It is inexpensive, tastes great, and is nutritious. I like the way it keeps the recipe moist even after reheating and makes for a nice texture. I am a dairy eater, so that's that.
