        • thanks, girls! a little ego boost for me today!

          I'm having a cup of hot broth --- that I made my very own self! Its a bit salty - but good. I had 2 whole chicken skeletons from a couple weeks ago. I froze them and then decided to put them in the crock pot with some water, chicken boulion (sp?), carrots and onions and seasonings. I cooked it on low for 24 hours! The bones were so soft they crumbled in my hands! I strained out the bones, and then used a stick blender to mix up all the goodies left over. I think I did a good job for my first attempt at making broth. It would make an excellent soup base.

          So......... yesterday I ate a salad with salmon and shrimp and honey mustard dressing. Then I had a small bit of meatloaf. Thats all I ate all day. I don't have any appetite these days. Not sure why. I don't feel sick, I just don't feel like eating. So, I'll listen to the body and eat when I think its telling me to. For now - the broth feels good going down. Its noon, and I haven't eaten since 4 pm yesterday - except for the small bit of meatloaf at 9 pm. And by small bit I'm talking about the size of a golf ball. So nothing really. My salad consisted of iceberg lettuce, cucumber, carrots, cauliflower and about 5 oz of salmon and shrimp combined. I would say I didn't have more than 600 calories yesterday. Oh well -- I'm not dying so I won't worry about it.

          today I will walk when I get home from work. One hour. And I will stay 100% primal.

                With PB my asthma has improved, low back pain is gone, & I've got more energy

                  • so --- its now 6 pm and all I've had today is a cup of broth and a couple spoonfuls of almond butter. I think thats weird -- no hunger, no weakness or light headedness. In the past 2 days I have eaten a salad with shrimp and salmon and a golf ball sized peice of meatloaf, a cup of broth and a couple spoons of almond butter. I hope this is my body saying --- I'll eat off my own fat for a while, thanks!

                    Hubby and I are going out for dinner tonight though....... well maybe. I do have 2 chickens waiting to be roasted. I'll have to see what hubby wants to do. A customer gave us a gift certificate to a nice place that we've never been to. Its a restaraunt at a golf course. They are supposed to have pretty good food. The hard part is getting him to answer his cell phone or call me back! UGH!

                    I haven't walked yet........... shame on me. I was going to walk when I got home from work, but I started reading journals and doing a little research online and here I sit. Maybe I can talk hubby into walking with me tonight?

                        • Today I have three really large whole chicken breasts roasting in the crockpot with some homemade chicken broth, rosemary, oregano, thyme, and copious amounts of butter. Oh, and about 4 finely chopped cloves of garlic and lots of paprika! It looks beautiful so let's hope it tastes as beautiful! The fridge reeks like garlic right now after having the whole mess in the porcelain part of the crockpot in the fridge the last two days. I put it all together Monday completely forgetting I had class on Tuesday, so it's sat a couple days. I'll make up some mashed potatoes for hubby and the kids and some gravy from the broth. Yum! Can't wait!

                          And I agree. You don't look anywhere CLOSE to 52.

                          • Jenn, do you add liquid when you use the slow cooker for chicken breasts? I've only made a whole chicken and stews in mine, I think! I also had a pretty failed pork loin. It ended up really dry, though it came apart quite easily.

                            Also agreed on the Tomi-looks-much-younger-than-52 bandwagon

                            • I use homemade chicken broth, which I freeze in ice cube trays. I pop about 6-8 ice cubes into the crock pot and cook on low from about 7 am to about 6 pm. I really need to get a crockpot with a timer on it.

                              • I'm struggling to get back on the horse!!!! I'm starting over on the 21 day challenge cuz I blew the weekend --- but here it is wednesday and I'm still not fully back on board. OK -- today is the day!
